Tangerine beef With some inspiration from Saturday Kitchen this week To make the beef and marinade, mix the soy sauce, sherry, tangerine juice, 2 thinly sliced garlic cloves, sesame oil and chilli flakes in a shallow tray to make the marinade. Thinly slice the butchers steak across the grain and place in the marinade. Cover and refrigerate for 2 hours. Drain well. Dust the beef in the cornflour, then flash fry in the Set aside.... To make the sauce, heat the oil and fry the finely sliced shallot. Add the ginger and garlic and cook for 1 minute. Add the star anise, sugar and tangerine peel, a sliced green chilli then stir in the soy sauce, tangerine juice and cornflour. Simmer until thickened. Add ribbons of carrot and sugar snap peas before adding the beef and stir to coat everything in the sauce before finally adding in the tangerine segments. Sprinkle on the coriander to serve.

TOM KAA GAI Chicken coconut soup With memories of a day in Thai Cookery School Make a broth from putting 1/2 cup of water in a saucepan then add a chopped stalk of lemongrass, 1/4 cup of sliced galangal (or substitute with fresh ginger), 2 sliced shallots, 2 sliced tomatoes, sliced mushroom and kaffir lime leaves (dried leaves work well in this recipe). Bring to the boil then add a tin coconut milk, a breast of chicken sliced and chilli peppers to your taste. Season with fis...h sauce, tsp of brown sugar and salt. Stir well and when the chicken has poached add chopped coriander and 2 stems of spring onion. Finally finish with a little lime juice. The taste should be creamy, salty and a little sour. The chicken can be replaced by tofu or king prawns.
