Crust: 80 g almond flour. 50 g pecans (blitzed in a food processor to a crumb consistency). 125 g desiccated/finely shredded coconut. ... 45 ml orange juice. Freshly grated zest of half an orange. Dash of vanilla extract 45 ml coconut oil 2 tbsp golden or agave syrup. Filling: 150g pumpkin puree (made from baked pumpkin). 1.5 tbsp golden or agave syrup. We're making yummy pumpkin risotto tonight with our leftover pieces ūüéÉūüėõ 800g pumpkin, peeled and chopped into cubes 2 tsp dried thyme 1 medium red onion, chopped 1 carrot... 2 garlic cloves, peeled and thickly sliced 1 fresh red chilli 5 tbsp olive oil 1 litre fresh vegetable stock 2 tbsp butter 2 tbsp fresh thyme leaves 300g arborio risotto rice 50ml white wine vinegar or 250ml white wine Handful of grated Parmesan Salt and pepper Preheat oven to 220‚ÄĘc. Add chopped pumpkin to a large roasting tray and cover with 2 tbsp olive oil, dried thyme and salt and pepper and roast for 45 mins, until the edges start to brown. Heat up vegetable stock in a medium pan to a gentle simmer. Heat up a large pan, add 3 tbsp olive oil and gently fry onion, carrot, garlic and chilli for 5-10 minutes until softened and fragrant. Add in 1 tbsp vegan butter followed by the rice. Stir well until rice is coated evenly with the butter. Then add in the white wine vinegar and stir until it has been absorbed. Now add in enough stock to cover the rice. Stir well and simmer until the almost all the liquid has been absorbed. Continue to add more stock as needed. After about 20 minutes the rice should still be al dente but have a creamy coating. Pumpkin raspberry gluten free muffins with figs! For 14 muffins you need: 165g raspberries (can be frozen ones). 140 grated pumpkin (raw). 2 tsp ginger. 200g spelt flour. 60g sugar. 1 1/2 tsp baking powder. Dash of vanilla. 1 cup milk. 60 g oats. 2/3 fresh figs. Preheat the oven to 180C. Mix all the dry ingredients well and then add all the wet ingredients (except the raspberries). Beat until smooth and then add the raspberries by folding them gently into the batter. Put 1-...2 tbsp of batter for each muffin in a oiled muffin tin or in muffin cases. Bake for about 45 minutes. Cut the figs into segments and put on top with a tiny bit of drizzled honey if you like.
