About Airey'S At Borough Market
Slow reared rare breed meat for a distinctive fuller flavour.
Airey'S At Borough Market Description
Welcome to the Facebook home of Borough Market's newest bastion of butchery offering Lakeland delights to Londons connoisseurs of all things carnivorous. Reared on our farm that lies on the pristine farmland between Morecambe Bay and the southern shores of Lake Windemere and slaughtered at our small on farm abbatoir we're proud to say that our happy and relaxed livestock travel the lowest 'stress miles' you're likely to find in food. If you haven't tried or maybe even heard of Herdwick Lamb we recommend you pop down for a chat with us here at Borough. We make the time to speak with our customers and can explain how best to flavour and cook your purchase and indeed how best to make use of those lesser known cuts that taste exquisite but need a little culinary TLC to extract the maximum from them. And if you enjoy our Lamb you'll find we're just as excited about our Galloway Beef, we think you'll find the flavour speaks for itself - happy livestock, makes tasty meat, makes happy diners

Simple Shin of Beef and Herb Dumpling Stew:
This recipe really is a winner for those cold winter Sunday’s; you’ve broken the bank at Christmas, the mercury’s plummeting and you’ve time on your hands. I cooked this last Sunday, the snow was thick outside, the dogs had been walked and the rugby was on - it’s easy, it’s affordable, it’s delicious and I guarantee it will warm even the coldest cockle. And joyously it provides that most welcomed element of culinary alchemy – “turni...

A comforting and hearty stew of Galloway shin with dumplings - just the ticket when the snows is thick on the ground.
I think I may have overdone the veg!
Hi Beany, we're open on the 29th, 30th and 31st - and yes we do both Shin and Leg of Galloway Beef - all dry aged for a minimum of 26 days and perfect for slow cooking. Let me know what you'd like and I can have the order waiting on the stall for your collection. Merry Christmas.
How to make Topside of Galloway Beef into a tasty seasonal treat:
I’ll admit that sometimes Topside of beef needs a modicum of help, that’s not to say it can’t be as special as prime rib, sirloin and rump, and personally I think that if you spend a fraction of the cash you saved on the joint “on the pimping up the joint” then you’ll wow your diners and treat your taste buds too. Plus you’ll learn loads as you do it.
You don’t have to follow this recipe verbatim but if you app...
