M A S H M O N D A Y • We have used our Aunt Bessie’s Mashed Potato to create tonight’s meal, Smoked Haddock Fish Cake topped with a poached egg • Here’s how you can make them... • Ingredients: ✅ 700g smoked haddock fillets ✅ 4 eggs, 3 beaten, 1 for poaching ✅ 4 tbsp. capers, drained, roughly chopped ✅ 60g/2½oz gherkins, roughly chopped ✅ 75g onion, peeled, finely chopped ✅ 4 tbsp. finely chopped fresh flat leaf parsley ✅ 50g plain flour ✅ 75g dried breadcrumbs ✅ Salt and freshly ground black pepper • Method: 1️⃣ Take the haddock fillets and cook in the oven at 180 fan for 8-10 minutes, or until the fish is cooked through, then remove from the oven and set aside to cool slightly. 2️⃣ Remove the skin from the haddock fillets and flake the fish into a bowl, discarding any bones. 3️⃣ Meanwhile cook the Aunt Bessie’s mash using the instructions on the pack. Once made, mix in the flaked haddock, gherkins, capers, onion and parsley. Mix in well and season to taste with the salt and pepper. 4️⃣ With slightly damp hands, divide the mixture into eight equal portions and shape each portion into a small cake. Dredge each cake in the flour, then dip into the beaten eggs and then roll in the breadcrumbs to coat. Place the fish cakes onto a plate, cover with cling film and chill in the fridge for one hour, or until set. 5️⃣ Pre heat the oven to 200c/180 fan/gas 5-6. Place some grease proof paper on your baking tray and spray with a little oil, place your fish cakes on top. Then place in the oven for 20-25 mins (ensure you turn over half way through). 6️⃣ For the poached egg you need to bring a pan of water to the boil then turn it down to a simmer make sure you put some salt in the water. Make a vortex in the middle of the pan crack your egg in to it and let it cook for 2-3 mins then lift out and let the water drain off. Then place on top of your fish cake. 7️⃣ Serve and enjoy
