The wonders of Sourdough... Ironically, commercially produced whole grain bread, generally perceived as “healthy,” is often the worst thing a person with a wheat intolerance should eat. Luckily the wild yeast in Sourdough bread and lactobacillus in the leaven neutralise the phytic acid as the bread proves through the acidification of the dough. Tip four: Sourdough bread has a wonderfully tangy sour flavour, a deep, chewy, satisfying crust, and textured crumb. The higher the hydration of the dough, the softer and more open the crumb. Sourdough is so popular as its one of the tastiest and healthiest yeast free loaves, but perhaps the trickiest to bake... it's, therefore, a wonderful challenge for a home baker. Tip three: creating a unique starter is the most important part of baking your sourdough. But what is a starter?! It's flour and water that's allowed to sit and ferment to cultivate a wild yeast. The wild yeast works hand in hand with natural bacteria, and it's this bacteria that produces the tasty sour flavours and aromas. No two sourdoughs are the same!
... Treat your starter like a much-loved pet or newborn with plenty of attention and care; as you take some starter away to bake a loaf, lovingly feed the rest with more flour and water as required. Starters are like a fine wine, improving with age. After baking sourdough a few times, you'll get the feeling of the best sourdough culture for you ... every starter is bespoke to the baker.

We had lunch at the cafe pool, my husband had a lemon chicken crusty baguette, it was stuffed full with delicious chicken breast with a tangy lemon mayo, he had a flapjack and said it was the best lunch he had ever had in a cafe. I Just had a coffee which was lovely and my brother had a very tasty pasty. we would go out of our way to eat there in the future, worth the drive from penzance , clean premises and very friendly staff

The day after my husband and I got married, we went to the Great Cornish Food Festival on Lemon Quay. We shared one of your cinnamon buns for breakfast - it was enough for the both of us AND our little boy. Best cinnamon bun we have ever had.. We still talk about that cinnamon bun almost a year later!! We also bought some of your bread to go with other goodies we bought at the festival, to eat for dinner that evening and that was also utterly delicious. My husband and I are both foodies so it was the perfect way to celebrate our big day. Thank you!

The best bread I've had for years. Cakes are delicious also great sandwiches, paninis etc went to the pool branch for lunch with a friend large portion and very tasty

So pleased we now have a shop in Penzance. Great range of breads, love the focaccias. Amazing cherry scones and Kernow curls - they are huge! Lovely, friendly and helpful staff as well.

Just had my first gluten free loaf from the Wadebridge shop, absolutely perfect! Have got so used to buying the GF "vacuum packed" bread from supermarkets, I didn't know bread could taste so good! Will definitely be a regular customer from now on!

Christmas shopping down Truro, so popped down to Baker Tom’s as they do fantastic sandwiches especially the baguette type. Never ever been disappointed and was a bit miffed that you had run out if onion for my cheese baguette, had tomatoe instead, still enjoyed it though.

We travelled all the way from Par, wish you had a Baker Toms in our area, even St Austell. Great setvice, lovely staff. Wishing you all a merry christmas and a wonderful New Year.

Any chance you're thinking of setting up shop in Yorkshire? The cherry scones are the best I've had (and I've had a few!), and the caramel flapjack is amazing!

Me and a friend decides to try a Baker Toms breakfast and I must say it was great value for money. The cafe was a bit cold especially when people didn't shut the door but that's neither here nor there. The only thing I would suggest is to get a few high chairs as our children were too small to sit on the chairs and kept sliding off them. But overall the place was clean, the staff were friendly and the food was lovely. Would definitely recommend Baker Toms to my friends.

I’ve been going out of my way to buy Baker Toms bread for a while now, and until last week I thought the bread was pretty great.

I’m really saddened to see that despite the problems we all acknowledge concerning deforestation for the purpose of producing palm oil, Baker Toms have needlessly added it to their list of ingredients.

Why? If we want to eat bread with additional nasties, we could buy it much cheaper at the supermarket.

I have been to the cafe in Barncoose a number of times and I've been enjoying it less and less every time. Baker Tom's bread is really good, no denying but every time I go in the cafe I feel rushed and like everything I order is just causing hassle.



I've eaten in and it's been good in the past but the last few times I've been have been pretty bad.



Today and the other day I tried to order a hot jackfruit baguette and it wasn't available which is pretty disappointing. Today I was told it wasn't going to be served anymore, then why is it still on the menu, so I can feel like I'm being told off for asking for it?! I have to say it's not the most enjoyable experience trying to order, I just feel like I'm hassling the staff.



Today, I settled on a "houmous, grated carrot and tomato sandwich". It was exactly what it says on the tin, nothing else, unimaginative and plain and £4.50 for the pleasure! Not great guys :/

16/3/17 This is more feed back than criticism. This was my first purchase from your shop in Penzance. The shop is great, also the lady that served was polite and helpful (long hair in a ponytail). I purchased a Cinnamon and raisin loaf and was very disappointed. There was a massive air bubble in it (which I know can't be helped) but also smelt better than it tasted. Certainly not enough Cinnamon in it. Sorry :/

Paid £7.20 for 8 saffron buns they had no saffron flavour, were dry and over cooked just sorry we had taken them home otherwise would have taken then back

I had a pasty today at baker Tom, s it wasn't very nice at all lumpy chewy meat under cooked veg and the knife wouldn't even cut the base .Wouldn't go again only went there because the last time I went the pasty was nice .today the veg looked quite black

Popped into the Pool cafe today hoping to have a vegan breakfast. Nothing! At one point vegatarians could have a traditional English breakfast but with a veggie sausage. Now it’s poached egg with hallumi cheese and assorted of other ingredients more fitting for a lunch and not a breakfast. Then as I said nothing for vegans although you’re requesting vegan ideas for your sandwiches. I feel you’re trying too hard to be trendy but with no real substance. Very disappointed
