Browns The Butchers Description

We are a small town business who since 1932, have been providing the people of Chorley (and surrounding areas) with only the best quality meats & meat produce. Browns is famous for having the attribute, being the Lancashire Haggis Co. which has now been around for 30 years. The haggis co was initially created by John Brown senior and then so evolved by tuning the original recipe by Tim and Chris Brown (sons).

I really wanted a pork chop for tea, so Chris cut a gorgeous thickly sliced one, with the rind still on and scored it for me..
Drizzle some oil on the chop, brush on some garlic, s & p (add your favourite herbs if you want too) I put it on my favourite vegetables that cope well with oven temperatures - sweet potato, onions, leeks and peppers - tossed in oil and s & p.
... Ready in about 40 mins, and I put some chutney on the side for a bit of sweetness.

Managed to put some Hunters chicken traybakes together.. oh, they look good!
Chicken thighs with monterey jack cheese and barbecue sauce inside, wrapped in our smoked dry cure bacon. This is on seasoned vegetables of sweet potato, onions and peppers.
... You can use the tray to cook it in, just open out the sides and spread the vegetables out, leaving the chicken on top,
About 40 mins at 180c and you will have a delicious tea ready 👍
I do love some melty cheese on food.

Our tray bakes are selling really well, so I’m thinking of doing a hunters chicken one too (barbecue sauce, monterey jack cheese and smoked bacon) would that make anyone happy? 😃
Chicken traybake Chicken thigh with some tasty bits and pieces to put in the oven.
... Chicken with mozzarella, spinach and chorizo Or Chicken with red pesto and halloumi
Both come with seasoned sweet potato, onions and peppers.
You can use the tray to cook it in too. Open out the sides and spread the vegetables around for an even cook, leaving the chicken on top. 35 - 40 mins @ 180c

Fillet steak £19.95 a kilo. These are not quite as big as our normal ones, so make a great quick fry fillet steak medallion for tea. You could always use it for the best stirfry you’ve ever made or for beef stroganoff.

Our retro sausage recipe this week is one we’ve not featured before. This is our italian herb sausage, that we did a few years ago, but as a Lorne block.
Mixed herbs, garlic and pepper are its main flavours with a hint of fennel to bring out the rest.

We have found a fabulous new herb rub, so we’ve added this to some spatchcock chickens.
The flavours are a delicious blend of thyme, oregano and rosemary, with some lemon and garlic too.
Spatchcock chicken is ready super quick (about an hour) and if you throw your veg and potatoes in the same tray, its a very low maintenance tea too 👍
... The rub is a very natural one, just a perfect blend of herbs to use on roast meats.

Couldn’t resist some of the fillet steak on offer.
I cut my own piece into slices, then a quick pan fry, grilled some tomatoes and mushrooms and made my own mustard sauce - creme fraiche, dijon and a bit of chicken stock.
Leave the steak to rest following cooking for 5 mins too
