How to Cook Healthier Curries: 5 Tips from Chef Akila
We’ve spent years trying to make each authentic curry recipe as healthy as possible, while still tasting delicious. Indian food naturally healthy but is commonly cooked & sold with a lot of bad stuff.
We got a lot of queries from our Facebook page on how our food is so low in calories & fat. So, here are some tips:
... 1. Oil, Oil, Oil
Oil is our biggest issues about most Indian food sold in the UK. Too much of cheap oil in everything. Use the least amount of the healthiest oil possible. We avoid all refined and commercial oils and only use cold-pressed oils.
The main oil we use (sparingly) is a cold-pressed British virgin rapeseed oil - from a Yorkshire farm. After testing 16 different oils for months, we chose Oil of Aldborough. Delicious for Indian cuisine and has an excellent nutritional profile.
Many recipes and videos online use too much oil. Don’t follow recipes to the word- use the least amount you can get away with. You can use water, low heat etc., so things don’t burn.
2. Balance it better
Try and make sure there’s enough fibre and protein. Many recipes allow use of more vegetables, beans or pulses in your curries or rice items. Be inventive. Spinach, greens, beans, lentils etc., can go nicely even in many chicken/meat recipes.
3. Leaner curry base
You can make hundreds of delicious curries with onion/tomato bases. No need to use too much of cream or fat. Even kormas & tikkas don't always need cream and can be made with less fat.
4. Keep it Natural
Use as many fresh/natural ingredients as possible. If you blend spices freshly, there will be real aroma and taste. If you have real flavours, there’ll be no need to add sugars, bottled sauces or chemical-laden readymade stuff. If you need colour use natural ingredients like paprika rather than artificial colouring.
5. Accompaniments
Often, it’s not just the curries, but the stuff you eat with it - naan, fried stuff etc., adds to the fat and calories. Cooking whole grains, making or buying whole wheat chapatis doesn’t take much effort. Cooked bulgur wheat is delicious and wholesome with curries and salads.
Lastly.. Curries are one of the best ways to eat more plants. India is a predominantly vegetarian country, there are numerous plant-based recipes - do try them. Our Vegan menu at https://www.chefakila.com/vegan/ is just a small sample.
