Food and Nutritional Sciences underpins one of the biggest industries in the UK and the world – people will always need to eat, but increasingly consumers are becoming aware of the effects their food choices have on their health and well-being. Healthy eating messages, food as part of a healthy lifestyle, and the production of nutritious, convenient food are issues that constantly have a high public profile. Our degrees provide you with the scientific background to make a difference to the way that food is made and the benefits it confers to the population. It is a diverse and constantly evolving subject, always in demand by industry and education, and always moving forward as exciting discoveries are
made. Our graduates are in great demand by a wide range of employers and our alumni have risen to the very top in their subsequent careers.

The Department of Food and Nutritional Sciences at Reading has an excellent reputation for the quality of its teaching and research and is the leading department of its kind in the UK. Uniquely within the UK, we have facilities for everything from human clinical trials, food manufacture and processing, sensory evaluation, microbiological and molecular analyses under one roof. This ensures
that we have an integrated approach to our teaching and research, to the benefit of our students and our industrial partners. We are a medium-sized department
with around 50 academic and support staff, thus ensuring individual attention and a friendly, caring atmosphere.

What happens when healthy foods go wrong? PhD student Ruth Barnes is examining the various approaches to reducing food spoilage and food poisoning.
Graduate School at University of Reading spoke to Ruth: “I enjoy the variety within my PhD, especially the laboratory work and problem solving. I have been able to get involved in teaching and demonstrating as well as mentoring undergraduate and master's students, which I have found very rewarding.”

WHY SOME PEOPLE HATE SUGAR-FREE DRINKS Since the sugar tax came in, manufacturers have been adding less sugar to some products. But what are they adding instead? Student visit to British Bakels & how to produce the "Perfect Slice" of bread!
Today a group of our UG & MSc students travelled to Bicester to visit British Bakels - manufacturer and distributor of a wide range of bakery ingredients.
As well as having a detailed tour of the site, including the labs, the students heard about the company' specialised areas including bread, confectionery and in-store bakery teams and had an opportunity to develop and taste their own bread recipe....
Competition was fierce with one of the teams producing “The Perfect Slice”.
We would like to thank British Bakels (Greg Stone and Alex Berryman) for their great hospitality and opportunity to learn about bread-making!
