Our friends at Ombra are teeing up for the next in their guest series, which will find us in Piedmont for the night with our own Sam Kamienko. For one night only - Monday 3rd December - Sams classic French references are going to segue, via the French pot-au feu, into a staple of the Piedmontese repertoire: meet 'Bollito Misto'. The ultimate sharing dish, definitive 'beige' food, and one of Piedmont's most historical recipes.
The misto is traditionally a long slow simmer ...of wiry, hard working cuts (a capon, a hen; ox or veal tongue) which over time melt into spoonable texture and render their stock a magical liquor. In Piedmont, there is typically a cotechino in there - a coarse textured sausage, rich in fat, which is sliced along with with the meats. Pour over the stock, add lentils, salsa verde and mostarda - fruit candied in mustard essence - and let your soul pass out at the table.
This is as weighty as Italian food gets, so Sam will be keeping things bright and light around the edges: think bitter leaves, anchovies, quince and citrus.
