So, that's Xmas completed, new year navigated successfully and time for our first blog post of 2020! With all the new year, new start stuff flying around, I thought it a great time to provide an update on how things are progressing with the brewery expansion. I started off over a year ago now with a 1/2 BBL Mashtun, a Braumeister (that pretty quickly just became an expensive Kettle) and some SS Brewtech Conical Fermenters, in a small unit that had been converted into a number of offices. Shiny 😍

After months of waiting we can finally announce that our 5BBL Brewhouse and 3 Unitanks will be delivered Thursday.
We’ve spent recent months brewing the odd beer, but mostly ripping out our unit, installing new floors, painting and generally working towards this day. We’ve spent hours developing lots of new beers and scaling up the odd past favourite. We’ve ordered ingredients and packaging and put in place hop contracts for the majority of 2020’s plans. We have a lot of goo...d beer planned.
Bear with us a little longer as we install and commission our new kit, build a cold store, sort our premises licence for a little taproom and shop onsite. We’ll keep you posted along the way.
We will see you in early 2020.

Electrician in today to make sense of the wiring that remained from us ripping the inside of the place out, fit new sockets and bring light and heat to the place. Sorted a man with a forklift to unload the kit when it arrives. Dry hopped a BIPA. Today was the first brew in a while. I spent a lot of time back in September and early October ripping out the pretty much the entire insides of my little unit, had a new floor and drainage put in and painted the whole place in readiness for the new kit which, thankfully, is now only a couple of weeks away. This has been a long time in the making. After 20 years of working in IT and 15 years of brewing as a hobby, various life events were the driving force behind the decision... to flip that on its head and the birth of Leviathan. Many things have conspired to delay this further but we are nearly there. After 4-6 weeks of darkness, today’s brew was an immeasurable lift, the dispelling of various clouds. It served as confirmation that my decision was the right one. Brewing has given me such joy in times of darkness and I cannot wait to spread this joy on a much bigger scale.
Today’s brew was a Black IPA. Pale Malt, a hefty dose of oats, flaked barley, Carafa III and a little chocolate rye form the robust backbone. Centennial bittering hops were followed by a big whirlpool of Mosaic, Simcoe, Amarillo and Azacca. The same will follow in dry hop. Coming soon, a big, juicy IPA that happens to be black....

Cheeky little chillers delivery 🤘🍻🤘🍻🤘

We’ve been a bit quiet of late, so thought we’d issue a little update. The brewery is pretty much ready to receive our new kit, the delivery of which has been delayed slightly (the scarcity of reliable electricians with free time in their diaries hasn’t helped). We’re hoping we’ll have the kit in and set up in a couple of weeks.
However we’ve not been sitting around twiddling our thumbs. New resin floor and drainage work has been done, plus a lot of painting. Our new chiller...s are arriving next week and we’ve spent the last 3 weeks or so developing lots of lovely beer recipes and running around sorting hops for next year’s beers on the new kit! We’ve had ingredients and kegs arrive for the first half a dozen brews. We are also going to be building our cold store in the next couple of weeks, which will double as a cellar when the Tap Room opens.
So, lots going on!! Having said that, we’ve massively missed brewing so tomorrow and next week we will be brewing 3 brews on the existing kit, which we’ll tell you about in due course! 🤘🍻🤘🍻🤘
