On the collagen theme again - had a lovely roast chicken with roast vegetables for Sunday lunch but we only ever use half of it for 4 of us. Instead of forgetting about it as we usually do, I stripped most of the remaining meat off the carcass and popped the carcass straight into the slow cooker with some very roughly chopped vegetables (we used swede, carrot, onions, leek), salt, pepper and as much water as I could fit in. I left it on low for 24 hours and then strained ...it off once everyone was home. Removed the chunks of veg and placed in a blender with 1.5 mugs of the delicious strained chicken stock and blended until really thick and smooth. You then gently fry off a half jar of Korma Curry Paste (I know you can make your own but aint nobody got time for that!) add the chicken you reserved from the day before, continue to fry off until all the chicken is coated, add the mixture from the blender, stir in 2 tablespoons of coconut cream, let the whole thing come up to a gentle bubble and simmer for 4 or 5 minutes over a low heat, stirring continuously, to ensure all the chicken is piping hot. Serve with rice or cauliflower rice if calorie counting. About 400 calories each if you serve with rice. Put the remaining chicken stock in the fridge or freezer. Much nicer than the ready made sauces, even though I do say so myself, low GI so excellent for diabetics and absolutely packed with the health benefits of collagen #improving my skin and joint health! https://www.measuresbutchers.co.uk/SHOP-O NLINE.php
