Sweet potato skins. Really tasty and healthier than regular potato skins and a lot tastier. Bake the sweet potatoes at 200 for about 40 mins, leave to cool and then slice in half. Scoop out the middles and mash with some cream cheese. I like the red pepper and chilli cream cheese from Lidl. Put the mixture back into the skins.... Chop some red onions, peppers, jalapenos and spicy beef sausage and sprinkle on top. You can add some grated Cheddar or similar before you sprinkle the chopped ingredients on the top ( this helps hold the sprinkled ingredients in place, my excuse)
Put back in the oven for approx. 30 mins.
Serve with Tamarind and Chilli dips.

More comfort food : Asparagus, poached egg and homemade Hollandaise ( soo easy to make and tastes so much better than the shop bought stuff - three egg yokes, 150 g of melted butter, some white wine vinegar and a dash of lemon, salt and pepper whisked in a bowl over a pan on simmering water)
Homemade sourdough with wild mushrooms and garlic, perfect with a glass of red wine and a fire as the nights close in.
