A winter salad for today. In London we tjought spring was coming but today.... Today snowing outside of London and a whole night raining.... Spring is definitely not coming yet!
... This salad is quite peculiar. Try it if you want to have something different. The mix of flavours and textures work well. Perhaps add some walnuts to it and a warm dressing like vegan sourcream with warm water and some peanut butter with chopped parsley? Just an idea. Daikon is like MARMITE, you either like it or hate it. Cooked it has a bit of a sweet taste, pikled idem but raw is like a radish... A bit bittery taste.... If you are not about that then this salad as it is might not be for you...... I have prepared this salad pretty neutral so you can season it as you please. My tahini dressing works here as it could work a sweet-chili dressing... For dressing ideas scroll down my feed and you will find multiple dressing recipes ☺️. As you see this salad is really light and is low in calories.... DINNER: LAZY SALAD
A lazy salad is one that you perhaps don't want to put too much effort on it but that tastes good. Or perhaps you haven't got that many ingredients left at home.... One way or another I find presentation a key point whenever I talk about food. It can taste good, but if it looks good, it tastes 100 times more better!... I left the dressing for you. Simply olive oil and salt but if you are off oils perhaos some lime and chilli, or avocado dressing, or tahini.... you have so many options! Just simply relax and enjoy it!
We have only 5 days left to reach the end of this month challenge. I really hope you have enjoyed it as much as me preparing it. I am so looking firward for the next challenge! Weekly cooked vegan budget friendly dinner/lunch recipes. It sounds already yummy!! Back to raw vegan in April

I have an announcement to make πŸ‘† Next month our challenge will be WEEKLY VEGAN MENU. I will create a weekly menu for you that is healthy, balanced and doesn't break your wallet. You will have 7 recipes for lunch/dinner. I have created this challenge thinking of those of you that are busy and have little time to plan your menus. It is easier to plan ahead your menus, it takes time off your head for something else, your weekly... shopping list is easier to make and more accurate so you save money on it too. On Sunday I will post you the weekly shopping list tou need for the week ahead and everyday I will post you the dish with the ingredients and the description of how to prepare it. Have your Vegan March sorted!!! Recipes are kids proved. If you have children you can make sure they will like them! Let me know with your comments what do you think about this challenge. Expect lots of Spanish vegan food!! Next month we will prepare vegan food. Raw will be back on April... But we will talk about it in the next month!

DINNER: ZA'ATAR SALAD
Moroccan food feels like sister food from the area of Spain where I grew up. ... I had this lovely carrots and I thought to prepare my own version of Korean Carrot Salad, but do you know what? My head told me that but my heart said differently. Always follow your heart.
I made it a bit crounchy adding the mix seeds I have. Some lemon juice and garlic gives it the twist thing to it. And za'atar adds just an extra bit of deliciousness to it. You can add some sultans perhaps or dried fruit. It will go well with it. Enjoy it!

LUNCH: MINT SALAD
I adore mint. It feels so deliciously refresing after eating it!!! I cannot but feel happy whenever I find it in my meal.
... This salad is a mix of my favourite flavours... Which include LEMON!! A bit bitter makes you good!!!! The dressing is important here. You can either use tahini, a bit of warm water and lemon or use peanut butter instead of tahini. Give it a go and then tell me how it was.
Almonds are from my dad's orchard, needlessly to say they are from another world!! Add any other nuts if you wish. Crunchy with tender and sour/bitter with sweet make nice mix!

LUNCH: SPANISH SALAD
Is it such a thing as Spanish salad? In Spain the most common salad you get in the restaurants has: onion, green olives, tomato, cucumber and lettuce... From there you mught get others with added sweetcorn, grated carrot and tuna.
... However what it reminds me the taste of Spain is actually the salad sauce we use which is: extra virgin olive oil, white wine vinegar and salt. That refreshing taste is what brings my memories back to my childhood going to the PISCINA B (a swimming pool I used to go to with my parents), eating at home with my parents something else AND the salad, by the beach eating at a restaurant... All childhood memories and mum's and family eating together around the table. Isn't it beautiful how a smell, a taste can bring you so many memories of love? Today is Sant Valentine's day but for me the ❀️ it reminds me is about the love I feel for my friends (today I got a good news from one of them who is in πŸ‡ΈπŸ‡ͺ Sweden living, she has been promoted and will start to work for the Government of Sweeden, Well done you Bea!), my family (just yesterday trying to find my art department showreel I found photos 12 years old, with my beloved uncle Kike who passed away nearly three years ago, my uncle Isidro, my parents... It brought me back to those days in the beach enjoying each other's company, laughing and being a happy family together), my son (how my 30s mean him, how life was before him, how I learnt to be a mother, made mistakes, I learnt from them and continue growing with my boy. How I faced difficulties and overcame them making me stronger) and myself (looking back and being proud of all the experiences I had and more to come).
