JOLLOF RICE TIPS www.naijainfusions.com Info@naijainfusions.com 07402847895 Let’s talk JOLLOF RICE. I get asked, how often should I stir a pot of jollof? My answer, as often as possible (giving good intervals). ... Firstly, Pepper mix quantity is important (as that would determine the amount of water needed to begin with) Secondly, Water ratio is important (never add too much water to begin with, and when extra water is needed use boiling water). Thirdly, stir the rice on interval. Why? Because you need the rice to cook and soak up sauce evenly. Fourthly, the type of pot used will determine how soon, or how well the rice come out. Why? Because using a narrow pot will take longer to cook, will burn the rice quickly mostly if the pot is of cheap quality. Fifth, always start with fast heat, once the rice goes in turn the heat down. Never pour rice in cold sauce, it’s important the rice is washed in warm water also. After cooking, pls send my own😉..

Smoked Chicken and Turkey.. www.naijainfusions.com I was put off smoked turkey, after I was asked “are you hungry” during a visit. All I could perceive from the stew been prepared was just smoked turkey, despite having other assorted meat in there (because they ate in front of me). The smell alone and the fact I don’t eat much outside, completely put me off 🙈🙈. I just started biting my tongue, on how to ask the person, the cooking method used in a joke joke way 🙈. After few ...months😩, I asked and I was told (the poultry was bought, defrost, rinse, cooked in extra seasoning with other meat or it gets dumped into the soup/stew after rinsing). I then now use style style to tell the person, Next time pls just buy, rinse and parboil without any seasoning on it in just plain water. Why? *It gets removed excess salt *It helps reduce the over powering smoky taste *Because these poultry are continually been frozen and defrost, it’s carry buckets of bacteria *it contains some excess fat, boiling helps to remove some of the this. *Doesn’t require long boiling, few mins (you should see some weird looking stuff floating at the top. *After boiling, I recommend you grill In the over (without any seasoning again), you can fry but I recommend grilling. *I recommend applying same method to smoked fish also
