By now we have all heard about the benefits of coconut oil, but what about the versatility of this gorgeous natural product! I have jars dotted around the house, in my make up bag, car, hand bags... the best thing about it is you can warm it and decanter into smaller pots so you never need go without this wonder-oil! Take a read of this article for some uses, some you will have heard of some maybe not! But so many to chose from its simply amazing! My main tip is to source the best possible quality your budget allows... virgin cold pressed if possible. http://greatist.com/health/genius-ways-to -use-coconut-oil

A big part of being healthy is being organised. You know how easy it is to stay focused and eating the right foods if you have everything you need available in arms reach! Being organised for the week can be a struggle when you have so much going on...
But these Mason Jar salads are not only a treat to the eye, but because they look so good and so much fun to make, theres no excuse not to have your weeks worth of lunches ready to go!
... How to create the perfect Salad Jar... Start with your dressing... a couple of table spoons should do a large jar Next add a base layer, foods that are a little more robust such as beans and pulses, carrots, tomatoes.. these wont go soggy sitting in the dressing Pack in your choice of veggies, anything goes! Try theming your jars such as Asian, Mediterranean, Mexican, Curry... and the tighter you pack your jars, the less air, the longer they stay fresh Lastly add your leaves, fresh herbs and nuts and seeds
If you want to include proteins such as fish, chicken, cheese etc then just add the day you will be eating your salad. When your read to eat, simply empty into a bowl to combine with dressing and devour!

Sometimes we juggle so many things in life, its hard to see the wood for the trees. Our time is preoccupied with paying bills, rushing around, worrying and stressing from one day to the next! Then every now again we get a glimpse of how life could be... a simple life. One where we have the time to sit back and enjoy the fruits of our labour. Spending more time doing what we love with those we love and cherishing those moments. But how do we live this life more often??
We take... control.
Don't wait any longer to live the life you want. Start living it right now.
I have made some big changes in my life recently that I never thought possible. And now I realise just how easy it can be to do things that once felt like a dream! Start to believe, start to live and start to achieve what you never thought possible.
You are the only person standing in your way from everything you want.

Where is our heat wave?? So much for the long hot days we long for here in blighty...Never mind, just pack your bags and go somewhere warm and exotic... the feeling of sand between your toes is almost unbeatable. Have you booked your summer holidays yet?
This beach actually exists in the Bahamas, where wild pigs swim in the sea! Too adorable!

***KASSIE'S KITCHEN RECIPE***
Breakfast is so important but so often we either go without or don't eat the right foods. I know being organised is the key to eating well and if you bake a batch of these tasty little buggers at the weekend (ideal for making with the kids) you can keep them for the week ahead... breakfast sorted! Vegan and full of goodness, they are perfect!
Almond and Banana Muffins... (measurement in cups - makes life easy! just use an average sized mug) 1/2 cup almond butter 4-5 over ripe bananas mashed + 1 extra banana, sliced 3 cups old-fashioned oats (you could chose gluten free here) 1 1/2 cups plain unsweetened almond milk 1/4 cup maple syrup/agarve/honey 1 tsp vanilla extract (optional) 1/2 tsp pink himalayan salt 1 cup raw sliced almonds + extra for on top
Instructions 1.Preheat oven to 190 and grease a muffin tin with baking spray or a little coconut oil all the way to the top. 2. Melt almond butter in a large bowl over hot water until nice and runny. Remove from heat. 3.Combine all the other ingredients in the same bowl and stir until thoroughly combined. 4. Spoon into muffin cups and decorate with a few sliced almonds and a slice of banana. 5.Place on rack in the centre of the oven and bake until oatmeal cups are firm to the touch, about 20-25 minutes. 6. Leave to cool for around 10 minutes and then run a knife around the edges, slowly ease them out. 7. These are delicious warm and should be rewarded to those who made them... if there are any left pop them in an air tight container when cool and store in the fridge. They also freeze well so make an extra batch for emergencies!

The better the food you eat the more of it you can enjoy. We have been conditioned to think that we must eat less to be healthy and maintain our weight. Not so.
Imagine eating a BIG bowl of delicious wholesome stew packed full of chunky veg and pulses, finished with fresh herbs and even a chunk of home made bread.... or nothing! hmmm.. I know which I would choose.
