Why not celebrate National Cupcake Day and Pride month all in one, with these rainbow cupcakes? Let us know if you give them a try! (recipe from BBC Good Food)
Ingredients: 200g softened butter 300g self raising flour... 300g caster sugar 6 tablespoons of milk 4 large eggs 1 teaspoon of vanilla extract Food colouring in red, orange, yellow, green, blue and violet
For the butter cream icing 200g softened butter 450g sifted icing sugar 1 teaspoon vanilla extract
Pre-heat the oven to 180C/ FAN 160C/ GAS 4. Put muffin cases into a 2 12-hole muffin tins to keep a good even shape as they bake.
Measure all the ingredients into a bowl and beat until smooth. Now split evenly between six bowls and add a different food colour to each bowl, mixing well. Spoon layers of each coloured mix evenly between the cupcake cases.
Bake in a pre-heated oven for 20-25 minutes until risen. Cool the cakes on a wire rack.
To make the buttercream icing beat together all the ingredients to a thick consistency. Use a piping bag to swirl onto the top of each cake. Decorate to taste!
