A bit of background about Tim Lear and Pembury Porkers.
My name is Tim Lear, I am a self employed farmer/butcher trading under the business name of Pembury Porkers.
I trained as a butcher when I left school over 30 years ago, I have worked in both retails, wholesale and catering side of the business. In 1997 I left the butchery business and went to work for the Meat Hygiene Service initially as a Meat technician and then after spending time at Manchester University I qual...ified as a dual red/white meat inspector.
After 10 years with the MHS, I decided it was time to follow my heart to be me own boss and my passion for farming to produce outdoor reared rare breed pigs. I initially rented farmland from a local farmer before taking the plunge to buy my own land about 6 years ago.
As a qualified butcher I can now supply pork, beef, lamb, chicken and wild game which are either from my own farm or sourced by myself to ensure the quality of the products meets my desired high standards.
All meat cuts can be tailored to the requirements of my customers, I hand produce sausages each week, and these are my highly recommended farmhouse sausages or one of my speciality sausages such as garlic and mushroom, pork and leek plus several more.
