It's the second Friday in January, and the day when statistically we're all meant to fall off the bandwagon when it comes to our New Year's resolutions. At Pimento Hill we've promised ourselves to be better about making time to eat breakfast - and to not self-flagellate when that (occasionally) doesn't quite work out. Less pressure, more happiness. So far, we're still on track. 🙌🏾 Besides, some of our most favourite breakfasts make the best mid-morning snacks! 😆

You know what's better than jerk-seasoned walnuts? Jerk-seasoned walnuts in a winter salad with kale, pomegranate seeds, blue cheese and squash. Caribbean pumpkin is really wonderful if you can find it, although butternut squash works well too!
