Red Cabbage Description

Red Cabbage Nutrition is a social enterprise with the aim of improving people’s health through food. A nutrition consultancy founded and directed by Amanda Aitken.
Food and health are complexly interlinked and there is evidence to suggest that adopting a healthier diet can prevent or reduce risk and /or reverse symptoms associated with diet related ill health. But, with the plethora of food choice obtainable, the abundance of ‘diet’ advice available & the mixed ‘diet’ messages we are bombarded with; it is no wonder people are confused.
Therefore, Red Cabbage Nutrition aims to improve people’s lives through food by providing evidence based nutrition information and skills empowering people to make healthier food choices. Red Cabbage Nutrition will de-code and teach people to how plan, shop, cook and therefore provide themselves & their families with a healthy balanced diet within a budget. Shopping, cooking and eating is a fundamental part of our lives and being able to prepare & provide a meal brings about a real sense of accomplishment of which the benefits are numerous.

What is on Offer
• Cook and taste courses (make friends, have fun, learn basic cooking skills, collect recipes, taste new dishes, learn about reducing salt, fat and sugar and increasing fibre, fruit and vegetables)
• Pizza making sessions (great for all ages)
• Budget menu planning (learn how to plan and shop within a budget without compromising on nutrition)
• Label reading sessions the truth about salt, sugar and fat. UK dietary recommendations / understanding the different labelling systems
• Shopping tours (label reading, understanding recommended amounts of fat, sugar, salt and fibre, de-coding the ingredient lists)


About Amanda
Amanda Aitken is the founder of Red Cabbage (Nutrition). Amanda is an Associate Public Health Nutritionist and an experienced restaurateur. After working with a successful restaurant chain for over 10 years Amanda retrained to become a nutritionist. Amanda is passionate about food and health and is keen to share her acquired knowledge.

Currently, Amanda is running cook & taste sessions at Children’s Centres in the North West for parents with toddlers with the aim of improving health via food. The sessions encourage parents to plan and provide balanced meals for their families within their budget that are mindful of government recommendations (i. e. reducing sugar, salt & ‘bad’ fat intake whilst increasing the uptake of fruit and vegetables, low fat sources of protein & complex carbohydrates). Additionally, Amanda is in consultation with a local Primary School regarding breakfast and after school ‘healthier’ food provision after having previously audited and consequently provided a healthy packed lunch policy and guide.
Amanda is active in research and has co-authored publications and has presented her research at the annual Nutrition Society conference for two years consecutively and at the 12th European Nutrition Conference FENS 2015 in Berlin.
