Our recipe of the month is the winter warming hake casserole with shallots and wild mushrooms. Hailing from Rick’s classic 1998 book Fruits of the Sea, it’s a really lovely dish to cook for friends and family over the festive period. Try it yourself here: https://bit.ly/34E77o7

Be sure to listen to BBC Radio 4 at 3pm tomorrow afternoon when Rick takes over for half an hour to celebrate what he loves about Cornwall. He talks fishing with our very own fishmonger Flea, art with Kurt Jackson, farming with Nicola Hooper and music with his friend Dave Brown. It should be a fab bit of radio. We've got some beautiful red mullet from Cadgwith on the counter today. It's Jill Stein's favourite fish - simply cooked and served with a sauce vierge of fresh tomatoes, garlic, fresh herbs, extra virgin olive oil, lemon juice, salt and pepper. Delish!
Our recipe of the month for October is a seasonal favourite - hake with pardina lentils, Serrano ham and pimenton. The simply cooked fish sits atop earthy lentils that are full of the flavours of Spain to create a comforting dish, just perfect for an autumn supper with friends. One of Fishmonger James’s favourite parts of his job is setting up the fish counter every morning. This is him in action...
