The second in our series of 'Riley's Artisan Cuts'- In the past it was sometimes known as "butcher's steak", because they would often keep it for themselves rather than offer it for sale! Called the “hanging tender” by some old-school butchers and onglet by the French, this is one cut you might actually find on a steakhouse menu, as bistros have long preferred it as the perfect cut for steak frites. Because the cut is growing in popularity and there’s only one hanger steak pe...r cow, its price is rising accordingly. Salt and pepper it liberally and throw it into a cast iron skillet until medium-rare.

The T-bone: This cut includes sirloin and fillet, and yes, a T-shaped bone, as well as natural fat marbling, which all adds up to fantastic flavour. A mammoth steak taken from the whole sirloin, this cut is the best of both worlds. On one side of the bone is a piece of tender fillet; on the other side is a piece of flavoursome sirloin steak. T-bone steak is best simply seasoned, then quickly pan-fried, grilled or roasted. A thick T-bone (about 700g/1lb 8oz) will feed two peop...le generously.

The first in our 'Riley's Artisan Cuts' collection - The Tomahawk Steak is an on-the bone Rib Steak, cut from the Fore-rib with the entire rib bone left. The long bone is french-trimmed, leaving an amazing presentation, and dinner table discussion point. As it is bone-in Rib Steak, it has quite a large amount of inter-muscular fat, which gives it a load of flavour when cooked, as flavours are released from both the huge bone, and inter-muscular fat during roasting to give a ...sweet gelatinous flavour.
