Come and check out Schooners' own chef @vasepig doing what he does best; Vasey will be taking you through the process of making one of our favourite fish dishes, ceviche. The St Agnes Marine Conservation Group have got their ‘Discovery Day’ this Saturday down here at the beach. Come 4.00pm you may get a rare glimpse of Vasey outside the kitchen (yes he has got legs and he’s not built into the service pass). Bring your note pad so you can document the trade secrets, sacred rat...ios and ancient techniques that go into the dish. It'll be a great day so make sure you get down here early and get involved. This is Becky and she’s an integral cog in the Schooners machine. Her solid work ethic and bang-on attitude has landed her the best job in the house… decanting the ‘Schooner’s Scratchings’. The fumes from these in-house crackles are the reason she’s beaming. The crunchy dermis releases such a huge endorphin burst upon consumption that you actually lose weight while eating them. It’s the cool, crispy and delicious beer that’s the problem. Good work Becky.

During our down time Vasey has been out in Mexico arm wrestling gauchos and knife fighting with bandits in a bid to get closer to that perfect salsa; that mystical molé. And he’s close. Sean has been all over the world sourcing high-end tequilas for the perfect margarita. Like a cross between ‘The Man from Del Monte’ and Lemmy he’s left no cactus un...turned. He’s also close. Wigs has been in our great capital city keeping an eye on what’s fresh in the restaurant scene and making sure we’re ahead of the culinary curve. Selflessly dining out all over town in the name of research and development. We’re so excited to see everyone again and get cracking. Alex is back with us heading up the team out front. With new recruits to add to the Schooners family, as well as our battle hardened regular team, we’re raring to go. Come down, have fun, hit some plates, sink a few bevvies and let us look after you.
