Pad-Thai! A dish invented during food shortage in Thailand. Rice were expensive and people were encouraged to consume more noodles which were introduced to us by Chinese immigrants. Using local and easy to find ingredients such as tamarind, coconut sugar and fish sauce, Pad-Thai quickly became a staple and is popular all over Thailand.
