Over the last couple of days weŌĆÖve enjoyed these two pasta dishes, prawn & rocket pasta with lightest mayo & roasted vegetable pasta in a herby tomato sauce ... we loved both. ­¤ŹŚ­¤ŹĢ Recipe of the week ­¤ŹĢ­¤ŹŚ
PIZZA TOPPED CHICKEN
Enjoy the pizza experience while keeping the Syns as low as possible. And if you want to swap the toppings for other favourites like mushrooms or spinach, go right ahead!
... Ingredients 1 red onion, finely chopped 1 large red pepper, deseeded and roughly chopped 2 garlic cloves, crushed 120ml boiling vegetable stock or water 4 skinless and boneless chicken breasts low-calorie cooking spray 400g can chopped tomatoes 2 tbsp tomato pur├®e 2 tsp dried oregano 125g reduced-fat mozzarella, drained and diced ┬Į tsp dried chilli flakes (optional) fresh basil leaves, to serve
Method Preheat the oven to 220╦ÜC/fan 200╦ÜC/gas 7. Place a non-stick saucepan over a medium-low heat and add the onion, pepper, garlic and 2 tbsp stock or water. Cover and cook for 10 minutes or until soft. Meanwhile, slice into the side of each chicken breast, taking care not to cut the whole way through, and open them up like butterflies. Spray a non-stick frying pan with low-calorie cooking spray and place over a high heat. Fry the chicken breasts for 1-2 minutes on each side or until they start to colour, then put them in a roasting tin and roast for 15-20 minutes or until cooked through. Add the chopped tomatoes, tomato pur├®e, oregano and remaining stock or water to the onion and pepper and simmer uncovered for 15 minutes, stirring occasionally. Season to taste. Spoon the tomato mixture over the chicken breasts, evenly scatter over the mozzarella and sprinkle with the chilli, if using. Return to the oven for 5 minutes or until the mozzarella has melted. Scatter over the basil leaves and serve hot with your favourite vegetables ŌĆō or all Speed veg if you want to make it an Extra Easy SP meal.
Tip: To make a veggie version, trim 2 large tightly packed cauliflowers, stand them up and cut away the florets either side of the stalk (save them for another dish). Cut whatŌĆÖs left through the stalk to make 4 thick ŌĆśsteaksŌĆÖ. Spray with low-calorie cooking spray, season lightly and roast at 220╦ÜC/ fan 200╦ÜC/gas 7 for 25-30 minutes or until tender, turning halfway. Top with the tomato mixture and mozzarella and finish as above.

This colourful salad is just bursting with flavour!
Ingredients... 600g baby new potatoes, peeled 450g (about 6) fresh mackerel fillets Juice of 2 lemons Salt and freshly ground black pepper ┬Į tsp dried red chilli flakes 200g frozen peas 150g red cabbage, thinly shredded 175g baby plum tomatoes, halved 100g watercress
For the dressing: ┬Į red onion, finely chopped 75g fat-free natural yogurt 1 level tbsp hot horseradish sauce
Method Preheat your oven to 220┬░C/200┬░C fan/gas 7. Line a baking tray with baking paper. Boil the potatoes for 20 minutes,or until tender. Drain and thickly slice. Return to the pan and cover. Meanwhile, place the mackerel skin-side down on the prepared baking tray. Drizzle over half the lemon juice, season and sprinkle over the chilli flakes. Bake for 15 minutes, then leave to cool. Peel off the skin and flake the fish. For the dressing, put the onion, yogurt and horseradish in a small bowl together with the remaining lemon juice. Whisk lightly, then season to taste. Boil the peas for 1-2 minutes. Drain and put in a large bowl with the cabbage and tomatoes. Toss and season, then add the potatoes and watercress and toss again. Spoon on to 4 plates and top with the mackerel. Serve the dressing on the side, sprinkled with black pepper.

1 Syn per serving
500g lean beef mince... (5% fat or less) 1 large onion, finely chopped 2 garlic cloves, finely chopped 400g can chopped tomatoes 400g jar sweet peppers (such as Peppadew), drained and roughly chopped 3 x 300g packs butternut squash noodles chopped fresh parsley, to serve 4 level tbsp freshly grated Parmesan, to serve
Put the beef in a deep non-stick frying pan over a medium heat and stir-fry for 3-4 minutes or until browned, breaking up any lumps with a spoon. Drain off any fat and add the onion, garlic and 2 tbsp water. Cover and cook for 10 minutes or until the onion is soft, stirring occasionally.
Add the chopped tomatoes and peppers to the pan, reduce the heat to low and simmer uncovered for 30 minutes.
When the Bolognese sauce is nearly ready, put the squash noodles and 100ml boiling water in a non-stick saucepan over a medium-high heat and cook for 5 minutes or until piping hot and tender. Drain, divide between bowls and top with the Bolognese sauce. Scatter over the parsley and serve with the Parmesan to sprinkle over.
