INGREDIENTS:... ‚ÄĘ1lg Egg ‚ÄĘ31g Quark ‚ÄĘ85g Baked beans (Reduced sugar & salt) ‚ÄĘ30g Button Mushrooms ‚ÄĘ40g Cherry Tomato ‚ÄĘ10g Sliced Shallots ‚ÄĘOregano ‚ÄĘPinch of Pepper
DIRECTIONS: ‚ÄĘPreheat the oven to gas mark 4/180 electric. Line a baking tray with baking paper and spray with fry light. ‚ÄĘSeparate the Egg into two bowls and beat the yolk until air bubbles appear. ‚ÄĘAdd the quark to the yolk and continue to beat until smooth. ‚ÄĘUsing an electric whisk, whisk the egg white. The egg white should stay put when the bowl is turned upside down! ‚ÄĘGently FOLD the white into the yolk mix. Mixing and over mixing will prevent the cloud bread from rising. ‚ÄĘUsing a piping bag and nozzle or a spoon, transfer the mixture onto the baking paper and season with pepper ‚ÄĘPlace into the oven for around 25 minutes or until golden. ‚ÄĘSpray fry light into a small saucepan and on a low heat, start to cook the mushrooms. ‚ÄĘOnce the mushrooms are softened add the sliced Shallot and Cherry tomatoes and Season with a pinch of Oregano. ‚ÄĘOnce the cloud bread is done remove from the oven and heat the baked beans. ‚ÄĘGently remove the Cloud bread from the baking paper and serve with the beans on top along with the mushrooms, tomato and shallots.

DIRECTIONS: ‚ÄĘSeason the chicken breast with smoked paprika (or personal preference) and cook in the oven on gas mark 4. I prefer to cook chicken on a low heat to prevent it from drying out. ‚ÄĘMeanwhile, finely slice the mushrooms and cook on the hob with a small amount of fry light and seasoned with garlic. ‚ÄĘOnce the chicken is cooked remove from the oven and cut into it diagonally, but not completely through the whole breast. ‚ÄĘMix the cottage cheese with the cooked garlic mushroom along with some parsley before spooning the mix into the split chicken. ‚ÄĘReturn to the oven for five minutes and increase the temperature to gas mark 5.
Serve with 30g of Rocket or with 30g of vegetables from the step 2 Cambridge weight plan list.

Check that the egg has cooked throughout before serving. ‚ÄĘMix 1tsp of Finely sliced chives into the quark and serve as a dip along with the salad.

THE SAUCE: ‚ÄĘ250g Canned/Tin Tomato‚Äôs ‚ÄĘ50g Mushrooms ‚ÄĘ25g Cherry Tomato ‚ÄĘ25g Shallots ‚ÄĘ1/4 tsp CWP golden vegetable flavour ‚ÄĘChilli Flakes ‚ÄĘ1/2 tsp Coriander ‚ÄĘ1/2 tsp Oregano ‚ÄĘDash of Pepper ‚ÄĘMinced garlic clove
DIRECTIONS: ‚ÄĘIn a deep bowl add the raw minced Pork with 50g diced Shallots, one minced garlic clove, Chilli flakes (personal preference to quantity) and Coriander. ‚ÄĘMix together well, cover and refrigerate for a minimum of ten minutes. ‚ÄĘOnce you are ready to cook your meal, preheat the oven to gas mark 6/200 fan. ‚ÄĘChop the sauce ingredients into very small pieces, mix together with the seasoning and set aside. ‚ÄĘUsing you‚Äôre hands mix the pork and start to form the mixture into balls. You‚Äôre going to be filling these with cheese, so they need to be slightly larger than bite size. ‚ÄĘYou‚Äôll now need to make incisions into the meatballs, deep enough to fill with cheese. Do not make the incisions too deep otherwise the meatballs will split (Just less than half way will be fine) ‚ÄĘUsing a piping bag and nozzle fill the meatballs with the soft cheese. If you do not have a piping bag and nozzle then use maybe the handle end of a teaspoon to spread the cheese in to the hole. ‚ÄĘOnce filled, Place the cheesy meatballs onto a lined baking tray or oven safe dish and cook in the centre of the oven for 15/20 minutes. (Always ensure that food is cooked thoroughly throughout before serving) ‚ÄĘMeanwhile, weigh your 200g of courgetti and set aside. ‚ÄĘCook the sauce on the hob on a low heat to soften the vegetables. ‚ÄĘOnce the meatballs are cooked place the Courgetti into the microwave for two minutes. Drain any excess moisture from the courgetti ‚ÄĘServe the cheesy meatballs and the sauce on top of the courgetti.

... INGREDIENTS: ‚ÄĘ100g Tuna (in water or brine) ‚ÄĘ100g Fat free Quark ‚ÄĘ1 Medium Egg ‚ÄĘ25g Spring Onion ‚ÄĘ25g Rocket/Green Salad ‚ÄĘ50g Tomatoes ‚ÄĘ25g Cucumber ‚ÄĘ100g Potato ‚ÄĘ1 & 1/2 tsp Extra Virgin Olive Oil ‚ÄĘSmoked Paprika ‚ÄĘFry Light ‚ÄĘPepper
DIRECTIONS: ‚ÄĘPrepare the crisps by slicing an unpeeled potato into very fine slices. Weigh your potato slices (100g) wash and set aside preferably on kitchen roll to dry. ‚ÄĘDrain you‚Äôre canned Tuna well and weigh 100g. Mix 100g of fat free quark into your Tuna and set aside. ‚ÄĘSlice 25g of spring onion and add it to your tuna. Mix well, cover and refrigerate. ‚ÄĘBreak the egg into a small dish or cup and beat, adding a small amount of Pepper. Prepare a medium sized frying pan with x3 spray of fry light and pre heat on low, ready to cook the egg wrap. ‚ÄĘRemove the frying pan from the heat and pour the egg whilst tilting the pan to spread the egg evenly. ‚ÄĘReturn to the heat and leave the egg to set for a minute or two. ‚ÄĘUsing a spatula carefully lift the edge of the wrap away from the pan slightly. If the egg wrap is ready to be turned, the wrap will move easily. ‚ÄĘTurn the egg wrap over and continue to cook for a further couple of minutes. ‚ÄĘOnce the egg wrap is cooked, remove the pan from the heat and leave the wrap to cool. ‚ÄĘPour 1 & 1/2 teaspoon on extra virgin olive oil into a small dish. ‚ÄĘUsing your finger, sparingly rub olive oil onto both sides of each potato slice. Set the potato slices onto a microwave safe plate and sprinkle smoked paprika seasoning on top of the slices. ‚ÄĘPlace into the microwave on medium to high for 4 minutes. ‚ÄĘRemove the plate carefully as it may be hot! Gently lift each slice and replace it on the plate. This will stop the crisps from sticking. Return to the microwave and cook for a further 4 minutes or until they start to brown slightly. (They need to brown to be crispy) ‚ÄĘRemove the plate from the microwave (IT WILL BE HOT) and set aside whilst you make your wrap. ‚ÄĘLay the egg wrap onto a chopping board and place the tuna & Onion mix slightly off centre along with some lettuce. Roll the wrap and slice into two or serve whole with the remaining salad and crisps.

I have been over weight for years and signed up for the Cambridge diet at the end of June. I am extremely excited to say that I have so far lost over 1 stone despite having a couple of ‚Äėblips‚Äô along the way. Amy has been a real support to me, she is never judgemental.
