If you have been reading the papers recently, you can be forgiven for thinking that the last thing that you should be tucking into is a nice plate of oysters.

The reality is, there are oysters and then there are those oysters that have undergone stringent purification and testing so that they can receive the final seal of approval that they are Cornish Assured Oysters.

This certification is unique to The Cornish Shellfish Company’s oysters and means that our oysters have been tested to be free of Norovirus and can be safely served uncooked.
