Australian Crunchie Cake
An old family favourite taken from the Be-Ro recipe book and was featured on Lorraine TV show.
A mysterious and decadent chocolate traybake snack bar.
... Ingredients 150g (5oz) SR Flour 225g (8oz) margarine 150g (5oz) caster sugar 75g (3oz) desiccated coconut 75g (3oz) crushed cornflakes 15ml (1 tbsp) cocoa powder, sieve 100g (4oz) chocolate melted (optional)
Method 1. Heat oven to 180C , 350F, Gas mark 4. Grease a Swiss roll tin 31 x 21 cm (12 1/2 x 8 inch). 2. Melt the margarine over low heat. 3. Stir in the sugar, coconut, cornflakes, cocoa and flour. Mix well. 4. Turn into the tin and level with a knife. Bake for 20 minutes. 5. When almost cold cut into squares or triangles. 6. Cover with melted chocolate if wished. We cover with melted chocolate and flaked almonds or sprinkle coconut on top.

Shortcake Jam Traybake
Ingredients 125g unsalted butter 125g castor sugar ... 1 egg. Lightly beaten 175g plain flour 50g ground almonds 1tsp baking powder 4 tbsp whole strawberry conserve 2 tbsp good raspberry jam Milk, to brush the pastry 1 tbsp demerara sugar 2 tbsp flaked almonds
Method Preheat oven to 160 degrees C. Grease and line a medium size square cake tin.
For the shortcake, beat the butter and castor sugar until thick and creamy. Add the egg and mix well. Add the flour, ground almonds and baking powder, then stir until combined. Turn it onto a lightly floured surface and knead briefly to just bring the mixture together. Divide the dough in half, then wrap in plastic wrap and chill for 30 minutes.
On a lightly floured surface, roll each dough portion into a square about the size of the tin, then press one square into the tin. Spoon the strawberry conserve over the dough, then the raspberry jam leaving a small border round the edge.
Top with the remaining dough square and press the edges together to seal. Brush with milk and sprinkle with demerara sugar and flaked almonds.
Bake for 30 minutes or until golden (cover loosely with foil if browning too quickly). Cool in the tin for 20 minutes before carefully removing from the tin and cutting into slices.
Enjoy with a nice drink.

Today’s recipe is for raspberry buns. A cross between a scone and a cake, with a little blob of jam in the middle. Kids will love them.
Ingredients: 150g self raising flour 75g butter, softened ... 1 egg, beaten 75g white sugar Raspberry jam (or any other flavour)
Mix the butter and flour together, as though you were making a crumble, until you get fine breadcrumbs. Then add the sugar and mix in. In a separate bowl, beat the egg and add this liquid to the flour, butter, sugar mix until you can bring the mixture together into a dough. You might use all the egg, but you might not. Then divide the dough into 6 equal balls. Arrange the balls on a greased baking tray, about 3cm apart.
Then make a dent in each one with your finger and fill it with a teaspoon of raspberry jam. My husband always says that I don’t put enough jam in, so make the dent as big as you like! Sprinkle with white sugar and bake in the oven for 10 minutes at 200 degrees.
This is the most difficult part - leave the buns to cool before you eat them. They are much nicer when they are cold, because the top goes crunchy.

🍞 🍞 Milk Roll Loaf 🍞🍞
This soft white bread loaf, about 7ins diameter and 1lb weight, made with milk and baked in a two-part, enclosed cylindrical mould with circumferential ridges to indicate slice-cutting positions. Because steam is retained in the mould and no surface is directly exposed the crust is unusually soft. There is some evidence that this bread was formerly occasionally made in extraordinarily long moulds, each over 1 yard, to be cut into separate loaves by th...e baker.
