Raw milk goat cheese. It has a natural crust, fine. Its dough is homogeneous in ivory colour.

“The Chaource is one of the famously indulgent “triple-cream” cheese, the Chaource is only matured for a few weeks in fresh caves. This Chaource is a farmhouse production, so the cattle is only fed local fodder (hay) when it is not grazing. The creamy, melt-in-the-mouth texture is typical of the triple-cream cheeses, with the edges becoming runnier with time. Its aroma is quite light, lactic with a hint of mushroom, while its exceptional taste of cream (crème fraiche) is balanced with notes of truffle and a light citrus aftertaste.”

Made in the Doubs it is a raw milk cow cheese. The Jura Wheel has a soft yellow paste, from which arises aromas of dried fruits and butter. Its texture is firm and buttery.
The millstone of Jura is exactly like a Comté, except that the producer found himself in excess of manufacturing quota. These millstones could not receive the famous green plate, and therefore the Comté appellation.
