Butterflied Leg of #Lamb for the BBQ
A butterflied leg of lamb is a great choice for the #barbecue! Ingredients: 2kg Leg of Lamb (serves 8)... Prepare the marinade and rub on the night before, if possible: Handful of Rosemary 2 Cloves of Garlic 1 Lemon Zest Olive Oil
Pre-heat the BBQ to high Sear the lamb on both sides, then move it to a cooler part of the bbq. #Cook for approximately 30-40 minutes for medium. The best way to test if it is cooked properly is using a thermometer - remove it when it reaches 60°C. Cover with foil and leave to stand for at least 20 minutes.

Pop the chicken, skin side up, into a roasting dish. Rub the marinade all over the chicken.
Place in the oven for 20 mins.
... Remove from the oven. Pour any juices and spices that have run from the chicken into a small jug.
Place the chicken on a hot barbecue. Cook for 15-20 mins on each side till cooked through. Insert a skewer into the thigh. The juices should run clear. If not, cook till they do. Baste the chicken regularly with the saved juices. Or cook for 30-40 mins in the oven, basting regularly.
Leave to rest, covered, for 20 mins before serving.
