Zingle Food - Home of Authentic North African Cuisine

We are on a mission to bring North African food to the good people of London.
Since coming to the UK from his Native home of Algeria, Youcef Selatnia has worked in the hotel and catering industry which is where he met his business partner and fellow French Algerian Zingle Sofiane Ziggai.

The word Zingle is a nickname used in Algeria to describe someone who does not conform to the norm or someone who’s a bit out there. )

Both classically trained chefs with over 16 years combined experience of working in the hotel and catering industry. It was when whilst working together that they decided that both were both ready for a change, no more working long and unsociable hours for pasty, bad tempered, “Stressed Eric” like head chefs. This is when they hatch their plan for their great escape from the drudgery of working in conventional kitchens.

They are now on a mission to bring authentic, fresh and homemade North African foods that they know and love to the good people of London.

Algerian cuisine is rich and diverse. It offers an eclectic mixture of fresh herbs and spices full of flavour which is a taste explosion from all over North Africa such as Morocco, Tunisia, Algeria & Mauritania and even has influences from France.

Algerian cuisine varies from one region to another, according to seasonal fruits and vegetables like olives, pickled lemons, dates & figs along with local herbs, spices and sauces.

Popular Mediterranean dishes can be prepared with meat, fish and vegetables to make, couscous (local grain), chorb a (traditional soup) normally served during Ramadan along with Bourek (Filo pastry with meat, fish and vegetable fillings normally with an egg which is then deep fried), Shakshouka, and tasty Merguez sausage, which is used extensively in Algerian cooking with a taste that differs depending on the region and added spices.

The Zingle boys can be found cooking up a storm of tasty, fresh food that any Algerian mum’s and grans would be proud of on Deptford and Sydenham markets. They make mouth-watering homemade dishes such as, Succulent Chicken Tagine with Preserved Lemon and Olives.
