Everyone makes kimchi differently, but I like to start mine off with a kimchi paste or 'glue,' which helps to bind all the flavours together and makes it easier to really rub the flavours into each leaf. I'm a spam fan...but I can see how it might not be everyone's fave. Out of a tin, it's slimy and a bit grim...BUT when it's pan fried to get crispy edges and skewered with sweet charred spring onions, I'm pretty sure it could win you over.
