"The chocolate that thinks it's a sandwich"
This is our "Chocwich" and it is a product we came up with when we started in 2013 - 2 thin pieces of chocolate with pate de fruits sandwiched in the middle. The result is an interesting contrast in texture - the crunch of chocolate with a softer centre.
We love pairing our Chocwich with various wines and alcoholic drinks. Have you tried this?

Always enjoy attending the Fine Chocolate Industry Association Elevate Chocolate events. Yesterday the summer event was held in New York City.
This year Rich (Dancing Lion Chocolate) organised the Chocolatiers sampling table at this eveny and asked us if we would participate. With carrying the chocolates all the way from London and then the summer temperature in New York, there's every chance the filled chocolates would be damaged. But our boxes of "Siem Reap" (Cambodian Curry Chocolate) and "Kagoshima" (Yuzu & Pink Peppercorn) arrived in perfect condition - both were winners International Chocolate Awards World Final. Thank you to our friend George for carrying them over. . Did you manage to try these 2 bonbons if you were at the event?

Sesame crunch is the latest flavour in our filled chocolates collection, and we have named this chocolate "Shanghai".
The inspiration came from "ma jiang mian", a Shanghainese noodle dish mixed with sesame paste. Instead of a smooth sesame paste, we gave our filling a contrast in texture by mixing in a sesame croquant.
This chocolate is available in our personal selection boxes. Maybe a gift idea for Fathers Day?

We planted the beans exactly a year ago. We have kept 2 for ourselves, and we have given their siblings to many of our friends.

Take our latest bonbon called "Shanghai" - the flavour inspiration comes from a simple dish of cold noodles with sesame paste in this Chinese metropolis ­¤ć©­¤ć│­¤ć©­¤ć│­¤ć©­¤ć│­¤ć©­¤ć│­¤ć©­¤ć│. And we love the contrast in texture in Shanghainese cuisine. So we have created a Sesame Crunch chocolate - toasted sesame paste with a sugar crunch filling, with a milk chocolate shell.

One of our most popular chocolates is "Kagoshima" - Yuzu and Pink Peppercorn.
The flavour inspiration comes from the southern city in Japan. The citrus flavour of yuzu pairs well with the floral note of pink peppercorn, and the chocolate we use is the wild Bolivian dark chocolate.
This chocolate was introduced in our filled chocolates collection in 2015.

One of our most favourite bonbons in our collection must be 'Siem Reap' - Cambodian Curry chocolate.
White chocolate is used for the shell and also in the ganache. Just like any SouthEast Asian cuisine, the flavour is complex due to the number of spices and herbs used - lemongrass, galangal, kaffir lime and coconut are just some of the ingredients we have used in creating this chocolate.
Many people have commented that when they bite into this chocolate, they know they are ea...ting chocolate but the beautiful explosion of flavour typically found in a Thai curry just fills the mouth. They are surprised by how well the flavour works with the chocolate.
This chocolate was a Gold winner at the International Chocolate Awards British Chocolatier Competition, and then it went on to win a Silver award at the World Final in Italy.

"I love your caramels - it's not just sweet.... it's actually got flavour" - someone said to us.
As we make all our caramels from scratch, we can control the whole process and flavour profile. Here we are making our Soy Caramel - the flavour is soya sauce (yes, you have read it correctly!). It's been referred to as Salted Caramel 2.0, due to the innovative use of soya sauce. The salt brings out the sweetness of the caramel, but the umami flavour gives it an extra depth too.
T...he caramel sauce won Great Taste Awards 2 stars in 2017, and it also won FoodTalk Gold award in 2018. Apart from using it on ice-cream, we love drizzling it on pancakes and roasted bananas. Have you tried our "Penang"? A Coconut & Pandan chocolate that we released earlier this year.
This is a rework on a flavour we had back in 2013. The "original" Penang was pandan in dark chocolate. Pandan comes in the form of long green leaves and is often used in Southeast Asia cuisine - it is not eaten but used more as a flavour. It is commonly known as Asia's answer to vanilla as its beautiful aroma and subtly nutty flavour adds complexity to many dishes.
This year we want...ed to revisit this flavour and we paired pandan with coconut. We also came across a vegan milk chocolate and this is used in a coconut milk based ganache and also as the shell. Our first non-dark chocolate that doesn't contain any dairy.

Updated our filled chocolates map (also known as "Flavour Journey Planner") to include our 2 new flavours (so far) this year - "Penang" (Coconut & Pandan) and "Shanghai" (Sesame Crunch).
A few years ago we came up with this idea of Harry Beck's iconic London underground tube map design, to explain our chocolates. The 3 horizontal lines represent the 3 main types of flavours we do, and the yellow, purple and green lines link up the flavours that have won awards.
This infograph...ic also helps us to remember all our flavours more easily, as we can visualise all the "stations" on this map. Currently there are 27 but there will be more coming (have you noticed a blank space in the middle left? There will be a new caramel coming later this year!).

How we spent Saturday.... chocolate judging at Academy of Chocolate. Today Albert was at the rejudging table with fellow experienced judges Dom Ramsey and Cherrie Lo, judging chocolate bars which have very different scores at the earlier rounds of judging.
