Another great recipe from our Customer Mr jurgen Kehn So here's the recipe
Itβs based on Hungarian Goulash. Instead of Beef I took a part of pork shoulder as I thought in summer it would produce a lighter dish and I am sure if you ask Les politely he will dice the meat for you.... The ingredients were: the meat, same weight of thin diced onions, tiny bit of flour, oil for frying, pepper, salt, paprika powder (I took smoked one), concentrated Tomato puree, some vegetable or veal stock, sliced mushrooms, smoked bacon lardons. Season the meat and brown in a few drops of oil, for the last minute add some or a lot of the paprika and the tomato puree. β transfer to a heavy sauce pan with lid. Do the same with the diced onions and transfer into the same saucepan with the meat. Add some flour (not to much, otherwise you will and up with a very thick sauce)), fill up with the stock, just to the top of the meat. Cover with a heavy lid and leave in a pre-heated oven (170 deg C) for about one hour or until the meat tender. By this time the onion should be fallen apart to give taste and body to the sauce. Fry the bacon lardons and diced mushroom in a frying pan until brown and at to the Ragu. When serving the dish just heat up again. I served the dish some fresh vegetables and my homemade Spaetzle, finishing them by frying them very slightly in butter to give them a golden colour. All very easy to do and also in advance
