Famous Cherry Blossoms in Japan We Japanese all cherish Sakura🌸/Cherry blossom not only for the lavish beauty but also for the short-lived life. It is a metaphor of human life, blooming season is powerful, glorious but tragically brief. We gather under the trees enjoying food🍱, drink🍶, songs🎤 and companionship as Sakura teaches us “Life is short.” The season starts around 20th March in Tokyo area.

Miso is one of the most essential condiments in Japanese diet, along with soy sauce. It provides the gut with beneficial bacteria that help us to stay healthy, good gut health is known to be linked to our overall mental and physical wellness. Miso is rich in essential minerals and a good source of various B vitamins, vitamins E, K and folic acid.
Aspergillus oryzae, known as koji, a filamentous fungus is used to ferment the soy beans. Koji is also responsible for the fermenta...tion of sake and soy sauce, so it is sometimes affectionally called 'Japan's national fungus'.
Miso is extremely regional and diverse in Japan, some are pale while others are red, and some are almost black. Miso varies in sweetness and saltiness.
During the class, you will learn:
*How miso is made *What determines the colour and taste of miso *What Koji is *How to prepare the soy beans before cooking *How to cook the soy beans *How to mix the ingredients *How best to store the miso and ferment *How to cook the following 4 simple miso recipes: (1) Baked aubergine with miso paste (2) Perfect everyday miso soup (3) Miso rice ball (4) Miso dip with veg sticks
At the end of the class, you will enjoy a wonderfully homely miso soup and the delicious miso dishes we made during the class, along with a glass of refreshment of your choice. Full miso making recipe is provided by email after the class.
You will take home about 1kg of fresh miso to ferment at home which will mature over the following 6 months before they are ready to be used.
The class size is small and it is held at the instructor Akemi's own kitchen, in an intimate environment where you will feel at home. The instructori is a certified Japanese miso sommelier.

Hinamatsuri/the doll festival㊗️ is celebrated on March 3 to pray and thank for the continued health and happiness of female children.👧 For 1 month around the date, ceramic dolls 🎎dressed in the decorative robes of the imperial court in Heian period (794–1185) are displayed. Japanese Super Vegan Food/ Shojin Ryori🍱 Shojin Ryori is the traditional dining style of Buddhist monks in Japan for over 800 years. Fundamentally it is the cuisine without meat🍖, fish🐟 or other animal products and it involves no bloodshed. Setsubun/Mamemaki👹 On 3rd February, we celebrate the day throwing roasted soy beans out of the door at a family member playing 'Oni', evil spirit, with the chant “Oni wa soto (Demons OUT! ) Fuku wa uchi (Luck IN!) Valentine’s Day in Japan!💋 Only in Japan🇯🇵 (I suppose!), the presents are one-sided, from female to male on the Valentine’s Day. Usually girls are giving chocolates🍫 to boys, not only to their special loves but to male co-workers and male-friends too, funny, it is not?🤪 So girls are busy preparing homemade heart shaped❤️ chocolates at this time of the year. Eat Soba (Japanese buckwheat noodles)on New Year’s Eve🥢 You will be amazed to know how well food is associated with seasonal events in Japan. On New Year’s Eve, we eat soba noodles, known as “toshikoshi (crossing the year) soba, wishing for a life to be long like noodles. Also as soba is easily cut by chopsticks, it signify that the bad luck of the current year will be cut away to welcome the new year. Why don’t you eat soba to usher good luck in the coming year?
