You’d be forgiven for passing these off as a bit beige but you’d regret it! These are caramelised white chocolate, coffee and pecan tarts. I’ll explain - caramelised white chocolate. Have you ever tried it? It’s AMAZING! The ganache is infused with coffee (erm, yaaaassss!) on a layer of caramelised pecans and with a sprinkling of sea salt to cut through the sweetness. After what can only be described as the morning from hell, somehow I managed to get some pastries out of the door and cakes finished. I literally don’t know how; what with collapsing cruffins, oven issues, non-arriving cake toppers, car issues, delayed deliveries, crap traffic everywhere etc. etc. I think I might go and have some breakfast now!
