Una / "This Is Not A Restaurant" Description

Created by Chef Martín Milesi, UNA will represent a strong desire to promote the cultural diversity of Latin American cuisine and will consist of a journey through the whole region. The different dishes will be linked to traditional ingredients featuring classical dishes and some more conceptual.

UNA was born from the wish to change our contact with the consumer. At UNA there is a total connection between gastronomy and client. While the kitchen is working for just one table, the guests at UNA will have the gastronomic experience of being attended to exclusively.

Like all spheres of activity the restaurant business has evolved and changed over time. Under the slogan “Just One Table” we have created a new business model where the raw materials personally correspond to each guest, for whom the Chef buys produce specifically.

The dining room at the Clocktower of St. Pancras Station generates an intimate and exclusive atmosphere. The guests may feel they are at home whilst at the same time in a restaurant environment.

At UNA we want the Chef to know who they are cooking for. We believe that many restaurants, driven by the need for and obsession with growth have lost contact with the client, as have many kitchens which never get to know the people who they are cooking for.

We see the re-emergence of the sensitivity and service which were offered at banquets prior to the creation of the restaurant in the 18th Century.
