At Ynyshir we serve a whole evening experience. Our menus are a journey of development, experience, flavour, story, history and locality. As our seasons change so do we, each year building on the last and creating our own style.

Ynyshir is a young team, passionate for what we produce and how it develops. A close team. There is no shouting here. Each member is respected for what they do and how they progress. We present our passions and our experiences and how they have come together to be Ynyshir. We want our guests to engage with what we are and what we know – everything comes out of the place and the people.

We take you through clearings and forests, sea and beach, mountain and pasture. We use the best from the best locale, at the best time of year. Nature and climate are always guiding. Ynyshir is about landscape and locality. It is seasonal in the traditional sense – we take the ingredients when they are ready and pickle and ferment them, salt and preserve to carry us through the winter and into the spring.

There is everything to be learned from the people who grow, raise and catch the food we prepare – the whole animal is used, the whole plant, the milk and the buttermilk. It is the utmost respect for the ingredients. The suppliers are just as important as the chefs. We only use the best.

Our menus are slow food – much time and care is taken in ageing, pickling, foraging, salting, preserving and souring. We are a small restaurant – we have the time to spend time as we serve such small amounts to so few people. We are constantly developing. We aim to convey a simple confidence which is as much about personality with no barriers. Everything is questioned and in some ways nothing is ever seen as completely perfect. It is brought down to its most raw state. Balance is key.

After 31 Michelin stars in the past year I thought I had tasted the best of the best, but the number of stars a place has doesn’t necessarily indicate quality, I had one of my most disappointing meals in a very well known 3*.

I decided that this birthday I would try something special. I did some research and a number of the Michelin restaurants specifically recommended this venue.



From arrival down a lot of country roads (it was a 498 mile round trip for lunch with a friend) we were presented with a lovely house in stunning grounds, as we walked in we were treated by lovely staff who seemed genuinely interested in us. Given my usual drink of soda and lime, but for only the second time it was proper freshly squeezed delicious lime.

We were sat in a lovely bar area, many of the seats had lamswool throws on them. They love their Welsh Oak (as do I) the tables in the bar and all the restaurant tables were the oak.

We sat at a bench in the middle of the kitchen where the nicest chef (and tallest) I have ever met talked us through all he was doing and the staff presented all the courses with detailed descriptions of each course.

I cannot go into the details of every course, I believe we had 20 but I think it might have been a couple more. The flavours textures and combinations were exceptional. Every course had its own character but followed beautifully from the last. We weren’t rushed at all, indeed every couple of courses Gareth asked if we needed a hold, but no our joy was amazing and didn’t want to delay.

We had so many different courses, I will post the menu and leave you to read it.

Gareth is clear in his aims, he does not simply pursue plaudits and awards, he simply believes passionately in his food his sourcing and making customers happy...was I happy at the end, almost perfection, just disappointed I couldn’t stay for breakfast as it sounded amazing.

It is a total experience, it is so much more than a simple meal, it is a journey through a selection of beautifully presented dishes flavoured superbly, to be honest it’s hard to put it into words.

Ps toilets stunning, another indicator of the care they take.

Was it worth the 498 mile round trip journey. What journey Home? I floated all the way back on the joy.

With One Michelin star already you know that Gareth will serve up good food. What we did not know was that there would be elements of sheer genius as well.



The emphasis on local food is almost de rigeur these days but the twist to this with the pickling, fermenting and curing is amazing. Add to this the Japanese influences with soy, miso and shush and you have a taste palate that is I think unique.



The setting is sublime with the sun rising over the Welsh hills, the Ynyshir bird sanctuary, Snowdonia on your doorstep and beautiful rooms.



We counted either 18 or 19 courses on the two tasting menus. Standout selections included the best garlic prawn ever, a fruit and nut dessert with duck liver mousse and a beef dripping fudge.



I suspect it will not be long before they get the second star!

What an experience. My wife and I sat on the bench in the kitchen wow wow wow great night great chefs. Gareth’s food is unbelievable. We have ate at Raymond Blancs restaurant and it isn’t close to beating the experience and food in Gareth’s kitchen.

Wagu steak is just out of this world.

What an amazing place from rooms to food. Each thing you eat makes you question the tastes that you are experiencing. Amazing atmosphere in restaurant very open and friendly. Good is unbelievable in every way.

What a wonderful experience, food amazing with flavours I am sure I will never taste again. Amazing food which I would thoroughly recommend this restaurant with rooms to everyone. All staff very friendly and knowledgable about the menu. A must go experience, love, love, loved it.

We visited last Thursday, and as we only live down the road in Aberystwyth its been on our to do list for sometime, WOW , I wish we had gone sooner, every dish of the 20 on the menu was stunning, who knew that Tomato from the Devils island, IOW, could be so tasty it nearly reproduced the katz diner sene in when Harry met sally, a truly stunning experience, we can't wait to visit again soon.

We stayed in this lovely place for my husbands birthday on 14th October this year.

The hotel is in a stunning position with amazing views and the rooms beautifully decorated in the different palettes of various artists - Degas/ Cezanne etc. Lovely staff and the tasting menu was one of the best eating experiences we have ever had. The care and effort that went into every course was evident - some very innovative and interesting tastes!

This was a dining experience. Loved every minute and every dish. The wagyu steak was literally the best thing I've ever had in my mouth! The not French onion soup was amazing! The cox's Apple and sorrel dish tasted like a memory. Brilliant all round to be honest. Would recommend to anyone (If you've got a spare £400 that is!). Worth every penny.

The best food experience my wife and I have ever had. Haven eaten at many good restaurants over the last few years I've always wondered just how much better a Michelin starred restaurant could be. But after our visit to Ynys Hir I now realise that a dining experience can be taken to another level. From the miso butter to the beef fat fudge. Not to mention the tiramisu to end it was an evening to remember. Coupled with the fact that the chefs and staff are some of the friendliest and least pretentious people in their field, made it an evening to remember.

The best eating experience ever. Every course was packed with flavour, quality ingredients and cooked with flair. We were lucky enough to sit at the chef's table so talked to the guys as they cooked and served. It's as good as it gets. I can't think of a better restaurant for food, relaxed attitude and impeccable service.

Loved everything about this place - from the warm welcome on arrival to the excellent breakfast on departure and everything in between! Our garden room suite was fabulous - didn’t want to leave it but was glad we took time to explore the lovely grounds and surrounds. The highlight of our stay however was definitely Gareth’s food and a seat on the chef’s bench at the pass enabled us to watch and chat with him and the team - wonderful! Not French Onion Soup was the first of 20+ courses and set the tone for what was to come - food perfectly prepared and bursting with flavour. With previous taster menus we’ve often had a clear stand out dish (and sometimes the odd disappointing one) but that definitely was not the case here - every dish was such an explosion of flavour that it was difficult to choose a favourite. Our thanks also to Amelia for excellent advice on wine choices and looking after us so well. My advice would be to go experience it for yourselves - you won’t be disappointed!

Great atmosphere, great team and superb food. In our opinion the best restaurant of the UK. Strange that they “only” have 1 Michelin star. So much better than many 2-Star restaurants we experienced.

A “must visit”, if you are in Wales.

Gareth Ward and the team are creating something special at Ynyshir. We have been visiting since 2011 and in that time it has evolved into what it is today; a first class restaurant with beautifully appointed rooms, that Joan would no doubt be very proud of. We hope they manage to stay the course and create something similar to that which Simon Rogan has achieved in Cartmel with L'Enclume and associated businesses. We genuinely think that Gareth is on the right track and will continue to visit and enjoy his latest creations.

Exceptional and fantastic are two words that spring to mind however this only begins to do justice to the dishes that we were served yesterday by Gareth and his team. The execution of cookery is also just the tip of the iceberg here. Foraging and agening are as much of a priority here as anything else. The depth of flavours and the level of cookery was quite simply the best I have ever sampled to date. Anywhere.

The ambience and atmosphere has a wonderful relaxed professionalism. Staff seemed delighted to be working there and showcasing what they were serving. I must go again and I will go again, many times I hope. Well done everyone who plays a part in delivering the experience. It was without fault.

The food deserves every accolade it earns absolutely top class service with no pretensions.

The grounds are a fantastic situation to be in with great walks, beaches and nature reserves close by.
