Hello, happy Valentine's day to all our members, hope you all have a lovely day. Just wanted to remind everyone that our savings club is up and running and we would love more of you to join. Think of the extra spends at Christmas if you save £2 a week! If you mention it to Frances on the desk on the way in she'll point you in the right direction.

From Joanne : I went to represent us at this meeting last week, it was quite frankly a really really tough day listening to all the stories and I very clumsily put a video together about it. However this letter from Joanna Young, who is the Chair of Trustee's at the Foodbank says everything that I wanted to say and more far eloquently than I was able to.

We will be opening the doors at West End Impact at 6:30pm on Christmas Eve to distribute the ALDI donations.
We don’t know how much we will have, it could be loads or could be a small amount but everyone is welcome especially if you are struggling this Christmas.
... If you are coming along please be on time but not too early as we will be setting up. Once all the food is gone it’s gone.

So after mentioning to everyone that they could make soup out of all those big tins of peas we had this week I thought I would follow my own advice, lol, So using 2 large tins of peas (one from this week and one from a previous week) I firstly made up two veg stock cubes using about 2/3 of the water suggested, peeled and chopped approx 6 smallish potatoes and boil them till soft in the stock then add the peas including the juice turn the heat down so they don't boil too much... (as that might shell all the peas and might change the texture) in a separate pan I fried off some bacon (I get the cooking bacon in Lidl which comes in 1kg packs so I used about a third of a pack cut up rather small and fried in some oil) So once everything is warmed up with the peas and potatoes you can puree it, I use a stick blender and make sure I blitz all the potatoes but leave some of the peas whole. Then you can stir in the bacon. This makes a good 8 portions and with bread would make a filling meal.

So I used a red onion, the mushrooms, the spicy pepperoni (then added a tin of tomatoes, tomato puree, some garlic paste, oregano and seasoning) making a lovely pasta sauce, cooked the spaghetti we got and tea for three of us for about 60p, thank you food club :)

This was on BBC1 last night and highlighted the need for Food Clubs and Food Banks... very interesting and part of it was filmed in our very own Food Club.

I love the fact that this is a co-operative and we all get a say in how it's run. I've been passionate about food waste for a long time, so it's great to be able to do something practical about it, especially at a time when I can't afford good quality food. I've been delighted at what's been on offer at Morecambe Community Co-operative, and I'm enjoying getting to know my neighbours as well!

Brilliant idea! Saves waste and helps me to contribute to the household in a time of financial instability.
