Lamb Mini Roasts with Oregano and Garlic
INGREDIENTS... 2 Lamb Mini Roasts about 300g -500g Rapeseed Oil 1 tbsp Lemon Juice 2 tbsp warm Water 1/2 Garlic Cloves 2 tbsp fresh Oregano leaves chopped 1 dried Bay leaf we normally place 1 on each joint Roast Potatoes and steamed Vegetables for serving
METHOD 1 Preheat the oven to 220ºC. Brush the roast lightly with oil and season with salt and pepper. 2 Place the lamb on a rack in a roasting dish. Roast for 15 minutes for rare, 25 minutes for medium, or 30 minutes for well done. For ease and accuracy use a meat thermometer. 3 Remove lamb, cover loosely, rest lamb for 10 minutes before serving. While lamb is resting, combine the oil, lemon juice, water, garlic. 4 To serve, slice the lamb and spoon over the oregano mixture. Serve with roast potatoes and steamed vegetables.
Sir Porkingtons Tip 1 Suggested roasting times per 500g for: Eye of shortloin/backstrap, lamb round or ideally a lamb mini roast. 2 Cook at 220ºC. Rare 15-20 min per 500g Medium 20-25 min per 500g Well done 25-30 min per 500g. 3 Judging your roast’s degree of doneness using a meat thermometer 4 The internal temperature for: Rare – 55-60ºC, Medium rare – 60-65ºC, Medium – 65-70ºC, Medium well – 70-75ºC, Well done – 75ºC. 5 You can also use tongs to test the roast’s doneness. Gently prod or squeeze the roast – rare is very soft, medium rare is soft, medium is springy but soft, medium well is firm and well done is very firm if you do well done you cant blame your butcher 😉

Ox Tail is back in our counter from today at Newton Hall and here is a lovely recipe to go with it enjoy.
Ox Tail Soup
Ingredients... 3 tbsp rapeseed oil (our price £2.99) 1.25kg/2lb 12oz oxtail, trimmed of fat and cut into pieces (our price £6.25 per tail) 1 onion, roughly chopped 1 celery stalk, roughly chopped 1 large carrot, roughly chopped 1 bay leaf 3 thyme sprigs 10 black peppercorns 2 tsp tomato purée 300ml/10½fl oz red wine 1.5 litres/2½ pints litres beef stock 1 tbsp plain flour Method Heat the oil in a large, flameproof casserole dish. Add the oxtail pieces and fry over a high heat until browned all over – you may have to do this in batches. Take the oxtail out of the dish and put it on a plate.
Add all the vegetables to the casserole and cook for 4-5 minutes, stirring occasionally. Add the herbs, peppercorns and tomato purée and cook for another minute. Pour in the wine and allow to bubble for a few minutes.
Return the oxtail to the pan and pour in the stock. Bring to the boil, then turn down the heat to a gentle simmer. Cover and cook for 2½-3 hours, until the oxtail is really tender and falling off the bone. Using tongs or a slotted spoon, transfer the oxtail pieces to a plate and leave to cool.
Strain the cooking liquor through a sieve into a bowl and leave to cool. Shred the oxtail meat and discard the bones. Place in a bowl and cover. Cover the bowl of cooking liquor and leave in the fridge, along with the oxtail meat, overnight.
The next day, scrape away and discard the layer of fat on top of the cooking liquid. Spoon the remaining jellified soup into a pan and heat through until simmering. In a small bowl, blend the flour and three tablespoons of the hot soup until smooth. Whisk into the soup and simmer for two minutes. Add the oxtail meat to the pan and heat through for a minute or two before serving.

Beer-Infused Ham Hocks
Ingredients 2 Ham Hocks (each weighing approx. 1.2kg) Ours are only £2.60 each... 1.5l Blonde Beer (Kroneburg Blanc is ideal) 80g Salt Zest of 1 Lemon, plus 2 tbsp of Lemon Juice 10 Black Peppercorns 4 tbsp Runny Honey 4 tbsp Dijon Mustard 2 Onions, peeled and quartered 4 Carrots, peeled and sliced lengthways 1 Celery, cut in half 250g Puy or Green Lentils A small bunch of fresh parsley, leaves only, finely chopped
Instructions: 🔪🍴🍽🍋🍜 Score the skin of the ham hocks with a sharp knife. Pour 1.25 litres of the beer and 750ml water into a large bowl and stir in the 80g salt until it has completely dissolved. Add the lemon zest and peppercorns. Submerge the ham hocks in the brine, making sure they are completely covered. Cover with clingfilm and refrigerate for at least two hours, and preferably overnight.
Pre-heat the oven to 180C. Remove the ham hocks from the brine. Stir the honey and mustard together and rub it all over the ham hocks.
Place the onions, carrots and celery in a large roasting dish and top with the ham hocks. Pour over 250ml of water and the remaining 250ml of beer. Cover with a layer of baking paper, followed by a layer of foil. Cook in the oven for 3 1/2 to 4 hours, basting the meat regularly with the juices and turning the hocks around from time to time. The meat should be falling off the bone. For the last 30 minutes of the cooking time, remove the foil from the ham.
Meanwhile, cook the lentils according to the packet instructions. Drain and toss with the parsley, lemon juice and a pinch of salt.
Serve the lentils with the shredded ham, carrots and onions and some of the roasting juices poured over the top.
Tip: Goes well with Sweet Potato on the side aswell ;-)
