We’re delighted to welcome one of the most admired characters in the UK wine trade. Paul created a respected importing business nearly 30 years ago, built it up, sold it, bought it back for a song, built it back up, sold it again, and invested his vast fortune in buying vineyards and creating a notable winery in South Africa. Waterkloof winery, perched on the edge of a cliff over-looking Somerset W...est and the Atlantic Ocean, creates a range of striking varietal wines in white, rosé and red, with the estate Sauvignon Blanc widely heralded as one of the greatest to emerge from the Cape.
There is much to talk about here, from the biodynamic approach in the vineyards, still ploughed by horse, to Paul’s controversial views on just about any topic that may arise. With a welcome glass on arrival served with canapés, and a four course feast matched to Paul’s wines to follow, this is one not to miss. It will be an informative, potentially feisty, but definitely very tasty evening.
The menu: Canapés on arrival Malay fish soup, with coconut, chilli, lime and mint Duo of lamb with rack and crispy breast, served with pea purée and a bean ragout Cheese course Lemon meringue pie
Each course will be matched to wines from the estate (apart from the dessert- they don't make a sticky!).

This is Richard (at his best angle), our Head Chef. Richard has a wealth of experience in renowned kitchens and has travelled widely to enhance his ‘education’, having done stints in Provence and the Great Barrier Reef. We’re delighted to have somebody who shares our unbridled enthusiasm for great flavour- here he is making his daily Hollondaise sauce for our eggs Benedict. I’ve put on 5kg since we started doing them- a real treat, but try and stick to one per week if you can. I can’t.
We’ll be launching an exciting new menu in a couple of weeks, but in the meantime, come and try a few of Richard’s specials this weekend, including Wild Argentinean red prawns, and loin of Iberico pork. Call 01606 882101 to reserve a table.

Wonderful food in a lovely atmosphere. Unexpectedly very child friendly with welcoming staff. Can't wait to go back, my two children (4yrs and 1year also enjoyed it). If you love food, cheese and wine this is the perfect place to go.

What’s not to like ? Fab choice of wine and a great friendly atmosphere. We love the opportunity to sample different wines and we always manage to find the perfect one to compliment our tastes

Went for an afternoon and loved it! The staff were so helpful in explaining all the wines and doing tasters! Loved the opportunity to taste so many wines before ordering a medium glass. Plus the prosecco was gorgeous! Definitely going again!

Such a great place to spend an afternoon or evening. An impressive selection of wines from around the world and interesting choices on the Enomatic. Love the large airy room as means plenty of space for groups without feeling cramped and enough space to get up and have a look around. The staff are great as they are happy to help and point you in the right direction of what you are looking for and will offer advice. Meat and cheese platters are the perfect accompaniment and the guacamole is one of the best I have tasted! Will be coming back soon. Thanks for having us!

Spent a Friday evening here as a belated Father's Day treat for my Dad. Staff were amazing & very helpful. Food is bite sized, allowing you to mix & match. Will definitely be back & would recommend highly!

I love Define. Can't get there very often as I can't persuademy partner to even go and try it. Light and airy decor, great accoustics for lively chatter, lovely relaxed atmosphere, attentive staff and you can watch an amazing parade of unlikely vehicles and stuff being towed along the A556. All very entertaining

Fantastic night at the champagne and oyster night- I've been to a couple of defines tasting nights- they're always very well run and nothing is ever too much hassle! Would highly recommend!

Fantastic food of top quality! And really helpful staff who were friendly & gave my wife and I all the choice of dishes available & which wines we should try with this.. very much enjoyed and will be back very soon.

Amazing define cooked breakfast and the coffee is just the best. Strangely enough I’ve never been here for wine! That perhaps needs to be rectified soon.

A fantastic Burns Night last night, well done everyone. Great venue, great company, excellent service, superb wine and food. Compliments to the chef and the friendly, attentive staff. Looking forward to the next event and all the visits in between. If you have not experienced one of Defines special events or paid it a visit, well worth a try.
