Grimshaw Community Centre is holding a Holiday Market on the 16th and 23rd of August (11am-2pm). It's a surplus food that's been donated by the supermarkets to the FareShare and then redistributed to participating community centres. The great thing about it is that you pick what you need and pay as you feel. Seriously! Share this news with everyone, especially those with big families.

This one was all about whole foods plant based diet. Very interractive presentation which also included a display of foods that one can eat when going plant based. We had local farmers' bounties on the table and tasted some of local jams, as well as a lovely meal together.

Recently I had so many greens in my veg box that I was worrying I won't be able to eat them all before they go bad, so I made a resolution that I will start making green smoothies, which I really enjoyed lately.😊 However, apart from tender leafy greens I also had spring cabbage and cavolo nero, which don't really go that well in smoothies as they tend to give it a very distinct cabbage taste, which can be good to those who don't mind it πŸ˜€(only not me😜). So I went on the quest... to find if I can also ferment them like normal cabbage and I was excited to find that yes, I could do that! πŸ˜ƒ Happy I was, because I don't like food waste at all! So, here is a simple way you can do that as well...I followed these instructions: https://www.culturesforhealth.com/…/hea rty-leafy-green-kra…/ 1 large spring cabbage was just enough to fill 1L mason jar. I used a press plunger from the coffee maker to compact the greens. And voila!

Our first of the year health seminar presented by Daniel Meszoly on men's and women's health. We heard so many inspirational stories of people turning their lifes down side up with plant based vegan diet! We had an amazing fellowship getting to know people from our community and having an evening meal together. Thank you for all your lovely comments about the night and food that has been prepared. Winter is a season of root vegetables and cabbages. Some people get intimidated by these options since they don't know what to make from them apart from soups and stews. The notion of healthy eating seems to be limited to having salads containing lettuce, cucumber and tomatoes. I myself was ignoring roots and cabbages before I found that you can actually eat most of them raw! 0_O What a surpise for some of you! So things like carrots and radishes you probably knew you could e...at raw, but how about beetroot, parsnip, cabbage, swede, celeriac, turnip and I don't know what else...but you got the idea.
"And how exactly do you eat them raw?", you might ask. Very easy! You just grate and chew it until your jaw droppes off. Ha-ha. Ok, maybe that wasn't so funny. Now, seriously, at first, I was doing just that and adding a salad dressing on top, which would soften up the veg a bit, but after a time I got tired of grating it all the time. So I found a really cool method of preserving this type of veg for a really long time, I mean, forever...probably. And that's just using good salt, water and canning veg in jars. This method makes it softer and depending on the amount of salt added it can still remain crunchy if you wish to make it so. This method is called "fermentation" and you can store the jars in a cool dark place outside of the fridge. It only becomes tastier the longer it sits of the counter. It is preferably that you use ORGANIC ingredients (which you can get from our Shop) for this purpose to get most of the nutrients. And what is also so wonderful about this method is that it enhances the nutient content of the veg!! "How is that?", you could ask. The answer is in the good bacteria that develops through time that also produce vitamins and enzymes beneficial for digestion. Plus the action of the bacteria makes the minerals in fermented (a.k.a. cultured) foods more readily available to the body. It's a really amazing bio-chemical miracle!! The last bit I would mention before you would blame me for writing a blog post is how you can enjoy this wonderful product. I personally prefer to put it in my salads or have it as side.
