Happy Birthday Kathleen Ferrier ‘our Mrs Wilson’ who was born today 22nd April 1912. Sadly she died tragically young (1953) at the height of her fame as one of the worlds greatest singers. At Mrs Wilson’s Coffee House you can see Kathleen’s life depicted on our walls. There are some lovely photographs of her with Mr Wilson & her friends from when she lived in Silloth.

The Guardian asked 50 writers to celebrate what’s great about the UK (Sat 30th March). SILLOTH is Mike Carter’s choice. Mrs Wilson’s is one of the beautiful three-storey Victorian buildings, on the main cobbled street overlooking the green he writes about. (ps his latest book is a good read highlighting many of the inequalities in our society)

New menu coming soon, very soon & on it will be SHAKSHUKA, the best eggs in the World!! Vegetarian, gluten & dairy free, healthy & really, really tasty. Perfect for any time of day.
Shakshuka ( the name means to mix or shake up) are eggs poached in a delicious, fragrant red pepper & tomato sauce, gently spiced with Middle Eastern/ North African flavours. Bread is, of course, the essential accompaniment for mopping up sauce and yolk but a cup of our Napoli blend coffee or glass of red wine; depending on the time of day; also goes down a storm. A walk along the prom looking out over the Solway followed by Shakshuka. What could be better? Did I say they were the best eggs in the world 👍

Today’s vegan dinner homemade BBQ pulled Jackfruit with my vegan mayo coleslaw in a brioche bun. Nearly finished my Veganuary for Max but raising awareness & funds for Cystinosis has to continue so children, like my 4 year old nephew Max, have a chance of a normal, healthy & long life. This rare disease is totally dependent on charitable donations. Please have a look at my just giving page for more information about Cystinosis & any donation will be much appreciated.

Day 19 of my veganuary challenge to raise awareness & funds to find a cure for Cystinosis. Brunch today was a plant based full English. Day 6 Veganuary Breakfast is the most important meal of the day! I know this because I’ve got a BSc in health studies & a qualification in Nutrition 🤪 I knowI should eat breakfast but I don’t or at least I didn’t. If you’re the same -not enough time in the morning why not try OVERNIGHT OATS. .A tasty and healthy way to have breakfast without much effort.
Step 1:Take a glass, jar or bowl and add a serving of porridge oats. Fill with as much as you think you’ll be able to eat ...the next morning. Step 2: Now fill up the glass with liquid until the oats are well covered. You can use milk, soy milk, coconut milk, almond milk, rice milk, oat milk, orange juice. Whatever takes your fancy. Stir. Step 3: Add a topping -Some ideas include: flax seeds, chia seeds, raisins, all kinds of berries, fruits like banana, cherries, apples or pears, sunflower seeds, pumpkin seeds, nut butters, coconut flakes, greek yogurt, plain yogurt, almonds, hazelnuts, walnuts, cashew nuts. Step 4: Cover & put in fridge. In the morning add sweetener of choice- agave syrup, stevia, honey, maple syrup. All ready to eat.
