The Hindquarter Butchers, Knott End Description

At The Hindquarter we believe passionately in providing high quality food using the best raw ingredients, working with local suppliers we know and trust and ensuring consistent preparation standards. To us food quality begins at the very first link in the supply chain, whether it’s cattle, pigs or poultry. We have a trained team of butchers and assistants who work closely with ourselves and our supply partners to offer you the highest possible standard of food quality, safety and traceability.
The Hindquarter sources its beef from two local suppliers, Forrest’s at Ribchester and Danson’s of Pilling. Both are family run farms who source suckler bred heifers, finishing them with the highest quality feeds locally sourced and milled on the farm giving complete control over what the feed contains.
Our pork is sourced solely from Barkers of Cockerham. By rearing his own replacements and milling his own feed Mr Barker offers the optimum product possible with 100% control over any feed the pigs eat. From the herd we select only female pigs, which offer a sweeter taste for our product and eliminate any taint associated with male pigs.
Our lamb comes from two neighbouring farms at Overwyresdale. Both have evolved to be totally sheep focused. A mixture of breeds is used to produce the lamb, providing a hardy but well developed animal that has the good shape and taste for the end product that we require.
All our sausages and burgers are handmade in the shop, ensuring that we can guarantee the products with confidence. We also cure local pork on the premises to make our secret recipe dry cured bacon.
