Have you ever tried Medlar cheese?
This was a traditional Victorian recipe based on a medieval spiced fruit paste. You can create this cheese by allowing your medlars to blet, before softening and straining them through a fine sieve. You then need to mix them with allspice and place them in a saucepan to cook, stirring often with a wooden spoon. You will know when your medlar cheese is ready, as the fruit will darken and thicken in the pan. Pour the paste into a mould or storage pot, lightly brush with almond oil, then enjoy.

Make sure you protect your peach and nectarine trees from both wet weather and winter frosts, as these can cause peach leaf curl fungus. Cover your tree with a screen of clear polythene, ensuring it does not actually touch the plant.
