Have you ever tried Medlar cheese?
This was a traditional Victorian recipe based on a medieval spiced fruit paste. You can create this cheese by allowing your medlars to blet, before softening and straining them through a fine sieve. You then need to mix them with allspice and place them in a saucepan to cook, stirring often with a wooden spoon. You will know when your medlar cheese is ready, as the fruit will darken and thicken in the pan. Pour the paste into a mould or storage pot, lightly brush with almond oil, then enjoy.
