ADANA and URFA KEBAB
These are the signature kebab dishes named after Turkey’s two most famous “kebab cities”, Adana and Urfa. Both of these kebabs are made with ground beef or a mixture of ground beef and lamb kneaded together with onion, garlic and spices then packed by hand around large, flat metal skewers.
The difference between ‘Adana’ and ‘Urfa’ is the level of spice. ‘Adana’ is the spicy sibling. Generous amounts of hot red pepper flakes and paprika are kneaded into t...he meat mixture giving it a deep red color and fiery flavor.
‘Urfa’ on the other hand, has very little red pepper at all. The meat is seasoned with salt, pepper and other regional spices like cumin and sweet paprika. The meat grills up lighter in color and has a mild flavor. Both ‘Adana’ and ‘Urfa’ are usually served with salad , lavash bread with a rice on the side. Afiyet olsun 😋

Turkish National Drink, RAKI ( for baki 😊) Raki is the official national drink, and is traditionally consumed either sec with chilled water on the side, or partly mixed with chilled water, according to personal preference. The subsequent dilution causes Raki to turn... a milky-white colour. This phenomenon has resulted in the drink being popularly referred to “aslan sütü “ ,literally meaning "lion's milk", which, together with the usage of the word aslan (tr. lion) as a Turkish colloquial metaphor for a strong, courageous man, gives the term a meaning close to "the milk of the brave". Ice cubes may be added, if desired, to diluted raki, since the anise in undiluted Raki tends to quickly crystallize.Raki is commonly consumed alongside mezze -a selection of hot and cold traditional appetisers-, and is especially popular alongside seafood, together with fresh arugula, white cheese and melon. The word "baklava" entered English from Turkish, although the dish is often thought to be of Greek origin. The history of baklava is not well-documented; but although it has been claimed by many ethnic groups, the best evidence is that it is of Central Asian Turkic origin.The version known and used today was probably developed in the kitchens of the Topkapi Palace. Indeed, the sultan presented trays of baklava to the Janissaries every 15th of Ramadan in a ceremonial procession called the Baklava Alayı. Afiyet olsun 🙂

KÜNEFE
This sweet and savory Levantine cheese pastry is hard to avoid in Turkey; Kunefe is made from a stretchy, unsalted fresh melting cheese called hatay found only in this region—mozzarella would be the closest Western analogue. The cheese is coated in sugar syrup-soaked phyllo shreds called kadayıf (the same ones used to make some varieties of baklava, as described above), and fried until crisp. Its appeal is the contrasting textures of the crunchy exterior against the soft, melty interior. It can be topped with pistachios, kaymak (clotted cream) or ice cream—or simply eaten on its own, preferably while still piping hot.
