Hi there,

My name is Kathleen Henderson, the founder of Cohú Nutrition. I'm an American, living in Northern Ireland with my Irish husband Daniel and our daughter Madison Fiadh Joy. Since moving to this country in 2010, I have been inspired to eat more healthily as I found many of the convenient (yet unhealthy) foods I was raised on in Midwest America were no longer accessible. I began to cook more from scratch, using wholefood ingredients, and I began learning about seasonality and eating foods grown locally to maximise nutrient content of our food. I have a University degree in Biology with a Chemistry minor from the U. S. , but decided to not go the traditional medical school route as it didn't seem to fit with my desire to prevent disease and not just treat once it has already occurred.

In 2016, I completed a Master's degree in Human Nutrition at the University of Ulster- Coleraine, so to further my knowledge to be able to better assist people at maximising their health.

Here in Northern Ireland, a country covered in clouds several months out of the year, this can greatly affect our moods, leading to too much emphasis on comfort foods that aren't the best for our health. I want Cohú Nutrition to be part of a trend in Northern Ireland towards helping people become their best selves and to learn to respect and care for themselves through proper nutrition and other beneficial lifestyle habits.

Nutrition is a journey, not a destination, and I want to bring others along, so that they can appreciate the benefits good nutrition can bring to life. Cohú is based on the Irish word (Cothú), which means nourishment, sustenance, and to bring a person to health spiritually and physically. This is my passion, for a healthier future for Northern Ireland and beyond.
