Recipe: 200grams of caster sugar 70grams of glucose 40grams of honey... 2 table spoons of water Add all the above to a pot until it reaches 147 degrees then add 15 grams of bicarbonate of soda and whisk

Tomorrow we will be showing you how to cook the perfect steak, the fluffiest chips & a rich peppercorn sauce!
What you will need (serves 2)
... 2 steaks of your choice (go for sirloin/fillet/ribeye or rump) 400g potatoes (Maris piper are perfect) Handful black peppercorns 1 beef stock melt Teaspoon red currant jelly 100ml cream A measure of brandy is you have it 20g butter 2 garlic cloves 3 sprigs thyme 100g greens (whatever you can get) 500ml oil (for frying)
If you don’t have a fryer (I don’t), we will be doing them in a pot of hot oil 😀

My brother edited this video for me, as it takes a good few hours to make, if you want to get the maximum flavour out of it!

Guys tomorrow we will be cooking spaghetti bolognese!
What you will need, this makes around 6 people! (I’m only feeding 2, so I’m going to use the extra Bolognese sauce to make a lasagne for the next night!)
500g mince... 1 red chilli (deseeded and diced/optional) 2 onions finely diced 3 carrots finely diced 4 stalks celery finely diced 4 garlic cloves minced 150g tomato purée 2 tins chopped tomatoes 200ml red wine (optional) Fresh basil if you can get it 1 teaspoon oregano Salt Oil Parmesan to serve! 100g dried pasta person roughly!

Just got a lovely surprise in the post! Some beautiful Lough Shore honey, pollen & honeycomb! Over the coming days we will be showing you how to make a simple dressing for salads & also a homemade granola using these products!

Passing your chicken stock & reduce on medium heat!
Just remember to skim the stock as it’s reducing (a layer of fat will appear around the edge of the pot, just skim that off!)

Ok guys, If you have just cooked your roast chicken dinner and you have the carcass left, add it to a big pot, add your vegetables and any vegetable trim you have left over! We are going to bring this upto the boil, then bring it down to a simmer for 3 hours! Once the 3 Hours is up, leave it over night to cool down and give it extra time to infuse! I will post a video tomorrow morning of what to do with the infused stock! 😀
