Absolutely brilliant morning This was our Christmas present from my dad who had done the class himself a few weeks prior. Roger (our chef and teacher) and Paddy took us through the steps to create a delicious and simple 3 course meal. We made mussels, mackerel and a lemon posset. It was fun to recreate at home once we'd learned the skills. Roger is passionate about sustainability and we learned lots about sourcing local food and making good consumer choices which was an added fun element. We all sat down to eat with some nice wine and got chatting to others. I would definitely do it again and will buy a ticket for friends visiting the region.

We went the long way round to go to the school from Belfast through Newry to Kilkeel then returned to Belfast from Kilkeel through Newcastle. This was also a great experience just getting there and away. The Mourne Coastal Route was just lovely. We were the only Internationals; everyone else was from NI. Roger was a great, high energy instructor. Everything we prepared was just smashing and people in the class were a hoot. Seemed like we were all old chums at the end. Lots of good wine and information on the farming and fishing industries in the area. A must do!!

We were down at the cookery school today doing a photo shoot of the dishes we has made for January's theme of Breakfast for Northern Ireland's year of food . We hope you enjoy the photos and recipes

Smoked Haddock Kilkeel Kedgeree A beautifully spiced breakfast or brunch dish if you have over indulged the night before.
Ingredients – Serves 6 50g butter 1 medium onion, finely chopped... 3 cardamom pods, split open ¼ tsp curry powder 1 small cinnamon stick 2 fresh bay leaves or 1 dried 450g basmati rice 1 litre/1¾ pints chicken stock or fish stock, ideally fresh 750g un-dyed smoked haddock fillet 3 eggs 3 tbsp chopped fresh parsley 1 lemon, cut into wedges, to garnish
Method Melt the butter in a large saucepan (about 20cm across), add the onion and cook gently over a medium heat for 5 minutes, until softened but not browned. Stir in the cardamom pods, curry powder, cinnamon stick and bay leaves, then cook for 1 minute.
Tip in the rice and stir until it is all well coated in the spicy butter. Pour in the stock, add 1⁄2 teaspoon salt and bring to the boil, stir once to release any rice from the bottom of the pan. Cover with a closefitting lid, reduce the heat to low and leave to cook very gently for 12 minutes. Meanwhile, bring some water to the boil in a large shallow pan. Add the smoked haddock and simmer for 4 minutes, until the fish is just cooked. Lift it out on to a plate and leave until cool enough to handle. Hard-boil the eggs for 8 minutes. Flake the fish, discarding any skin and bones. Drain the eggs, cool slightly, then peel and chop.
Uncover the rice and remove the bay leaves, cinnamon stick and cardamom pods if you wish to. Gently fork in the fish and the chopped eggs, cover again and return to the heat for 2-3 minutes, or until the fish has heated through. Gently stir in almost all the parsley, and season with a little salt and black pepper to taste. Serve scattered with the remaining parsley and garnished with lemon wedges.

Celebrate Northern Ireland Year of Food & Drink 2016 All-day Breakfast - Kilkeel Kippers Benedict This simple and beautiful breakfast dishes replace eggs with some lightly poached kippers.
Serves 2... Kipper fillets 500g, cooked and flaked coarsely 4 Muffins
For the Hollandaise sauce: butter 100g egg yolks 2 lemon juice
Method Put the kipper fillets into a heatproof container or pan and pour boiling water from a kettle over them. Leave to rest 10 minutes till the fish will come fairly easily off the bones. Carefully remove every small bone.
Make the Hollandaise sauce. Melt the butter in a small pan. Put the yolks in a heatproof bowl over a pan of simmering water. Slowly beat in the butter with a whisk, trickling it slowly into the egg yolks. Season with lemon juice and salt then remove from the heat. Give it a regular whisk to stop it separating. Split and toast the Muffins and spoon a little hollandaise on to each. Divide the kipper pieces between the muffins, spoon over the rest of the hollandaise and grill for a minute or two till golden. Eat & enjoy immediately!

Thoroughly enjoyed the cooking and the craic with MAST this evening at the seafood cookery school. Roger and Paddy were brilliant and the food was amazing.

Spent a very enjoyable and worthwhile day in the mourne cookery school doing the 5.5 hour course. Very nice welcome and warm mug of delicious coffee on arrival - quick welcome and briefing and off to work. We did 4 fish dishes and a desert. Roger is an excellent tutor and is entertaining. What I liked most was he cooked dishes that were very tasty but also relatively easy and did not involve a lot of expensive ingredients. I also liked the fact that while we were given recipies we were encouraged to adopt all dishes to suit our own tastes. There was excellent input on buying fish also and we were challenged to think outside the box when preparing meals. After each cook up we went and enjoyed our food in the dining area. Great day out - learnt loads and would highly recommend it for any level of cook...

Organised the seafood master class as a Christmas present for my husband. Food was fantastic. Fish literally just off the boat and Chef Rogers recipes and instructions so straightforward to follow. We really enjoyed the food, wine and the craic. Highly recommend it.

My husband & I attended the Seafood Masterclass session today. Using fish directly from Kilkeel harbour (mussels, seabreem & squid) & local ingredients we cooked (& subsequently ate) a 4 course meal. Our Chef, Roger, was knowledgable, helpful & good fun. A great way to spend a Saturday - we will definitely return!

Just home from a fabulous class with the MAST group. Learnt a lot, surprised myself with flavours and skills! Roger was such a fab teacher and Paddy was a great help. Great atmosphere, great food, great company. Highly recommended!!!

I was treated to this as a Fathers day present and it was fab. What a great way to spend a few hours on a Saturday morning. The Chef was great and patient. I had a ball even though I am not a big fish eater and a pretty average cook. Great experience that I would highly recommend.

Thank for such an informative and enjoyable day. Would definitely recommend the 5.5 hrs masterclass to anyone wishing to expand their seafood cooking skills

Bought for me as a Christmas present. The day was great. Roger and Paddy took us through no nonsense recipes which were so simple and full of flavour. Roger also shared some great tips for taking the recipes we learnt and adapting for a wide variety of days.

Great for people who love seafood but are nervous about cooking it themselves.

Bought a £75 cookery course as a present by the family and was not sure what to expect. However it turned out to be an excellent day - we made a lemon possett dessert first so it would be set with Roger the chef doing the berries to top it. We then cooked three fish dishes - mussles, squid and sea bream. Even if I do say so myself all the dishes were delicious. Roger and Paddy (who kepted everything going in the background) were excellent teachers.

The proof of the pudding was taking the skills learnt and using them at home. Last night cooked mackerel for 6 (upscaling from 1 was fun) and the lemon possett for dessert. Probably the best response I have ever had from the diners!

The family now know what to buy me for birthdays and Christmas!

It was a fantastic experience, the food was really simple to prepare and absolutely delicious, and there was plenty of wine to wash it all down! Great morning in mourne seafood cookery school in kilkeel! Present for Christmas from our daughters. My husband took to cooking with relish! Hope it continues at home! Enjoyed drive to and from Belfast along mourne coastal route too!

Fantastic day today with chef Roger learning to cook mussels, squid, mackerel and prawns. Even managed to successfully fillet the mackerel and set the pannacotta. Thank for such an informative and enjoyable day. Would definitely recommend the 5.5 hrs masterclass to anyone wishing to expand their seafood cooking skills

Bought for me as a Christmas present. The day was great. Roger and Paddy took us through no nonsense recipes which were so simple and full of flavour. Roger also shared some great tips for taking the recipes we learnt and adapting for a wide variety of days.

Great for people who love seafood but are nervous about cooking it themselves.

Bought a £75 cookery course as a present by the family and was not sure what to expect. However it turned out to be an excellent day - we made a lemon possett dessert first so it would be set with Roger the chef doing the berries to top it. We then cooked three fish dishes - mussles, squid and sea bream. Even if I do say so myself all the dishes were delicious. Roger and Paddy (who kepted everything going in the background) were excellent teachers.

The proof of the pudding was taking the skills learnt and using them at home. Last night cooked mackerel for 6 (upscaling from 1 was fun) and the lemon possett for dessert. Probably the best response I have ever had from the diners!

The family now know what to buy me for birthdays and Christmas!

Spent a very enjoyable and worthwhile day in the mourne cookery school doing the 5.5 hour course. Very nice welcome and warm mug of delicious coffee on arrival - quick welcome and briefing and off to work. We did 4 fish dishes and a desert. Roger is an excellent tutor and is entertaining. What I liked most was he cooked dishes that were very tasty but also relatively easy and did not involve a lot of expensive ingredients. I also liked the fact that while we were given recipies we were encouraged to adopt all dishes to suit our own tastes. There was excellent input on buying fish also and we were challenged to think outside the box when preparing meals. After each cook up we went and enjoyed our food in the dining area. Great day out - learnt loads and would highly recommend it for any level of cook...

Organised the seafood master class as a Christmas present for my husband. Food was fantastic. Fish literally just off the boat and Chef Rogers recipes and instructions so straightforward to follow. We really enjoyed the food, wine and the craic. Highly recommend it.

My husband & I attended the Seafood Masterclass session today. Using fish directly from Kilkeel harbour (mussels, seabreem & squid) & local ingredients we cooked (& subsequently ate) a 4 course meal. Our Chef, Roger, was knowledgable, helpful & good fun. A great way to spend a Saturday - we will definitely return!

Just home from a fabulous class with the MAST group. Learnt a lot, surprised myself with flavours and skills! Roger was such a fab teacher and Paddy was a great help. Great atmosphere, great food, great company. Highly recommended!!!

I was treated to this as a Fathers day present and it was fab. What a great way to spend a few hours on a Saturday morning. The Chef was great and patient. I had a ball even though I am not a big fish eater and a pretty average cook. Great experience that I would highly recommend.
