It's been a busy few weeks doing assignments, student clinics and now I'm studying for my mid term exams.
Having good nourishing food has been essential to feed the brain π€£πso I thought I'd share some of the must haves in my store cupboard that make easy quick meals and snacks and still keep it nutritious.

Yesterday was a 10/10 day I was so looking forward to Dr Michael Murray give his talk on Digestive Enzymes and food intolerances and he didn't disappoint. A truly interesting evidence based perspective. I honestly could have listened to him for hours, the time went by so quickly.
The added bonus was getting an opportunity to have a leisurely afternoon in Dublin with some of my nutrition buddies. A visit to Cornucopia Dublin, a stroll round St Stephens Green and a cheeky co...cktail at Cafe en Seine before heading to the Ballsbridge Hotel for the main event.

The initial consultation is 2 hrs and a follow-up appointment will be booked which lasts 1 hr. This is at a reduced cost of Β£40 and will be my final student clinic this year.... . All clinics are confidential and will take place under the supervision of a qualified practitioner and observed by final year Nutritional Therapists. . If I really had to pick a favourite out of all the treats I make, sesame brittle with cranberries, dipped in dark chocolate would be right up there. . Sesame seeds are a nutritional powerhouse and a great source of calcium, iron and magnesium. . Delicious in desserts and savoury dishes. Busy morning finishing off my festive sesame bark with cranberries, orange and pumpkin seeds. Dipped in 100% cacao (no added sugar) cacao nibs and organic orange oil. All ready for my family gifts. . Nothing beats homemade. . Gluten free, dairy free, 100% organic and raw.
Love all the Christmas flavours from almond marzipan to cinnamon, cranberry and orange. They are all amazing and make the most delicious treats. . I've been experimenting with one of my favourites sesame seed brittle. Adding orange, cranberries, almonds and pumpkin seeds gives it a festive twist. . Did you know that sesame seeds are a great source of calcium and zinc which are essential for bone health. They are also an excellent source of fibre.... . Just a few of the things I'm preparing for the Christmas festivities π

What an epic night @tedxstormont So many inspirational ladies evoking every emotion from laughter to tears, to me to and wow!!! Not to forget the guys either who brought their slant and passion of memorable women and careers that have shaped their lives.
I'm still buzzing from the event and delighted to have been there to see everyone and off course @annetteburke100 award winning photographer, EFT practitioner and friend. . Loved every moment and the event lived up to the t...heme of "Bold and Brilliant" and ultimately brave to tell their story and have it resonate among the audience. . Here are a few highlights starting with the hilarious Ursula Burns and her unique take on her roots in West Belfast and playing the traditional harp in a non traditional way. . Our last weekend of lectures until the new year. Now it's time for a well deserved break. I'm so proud of what we have achieved and the great support amongst all these ladies. . Over 48 hours later, perfect crispy activated nuts in a delicious cajun and sesame spice. . Tasted these once in Harrods and had to learn how to make them. 4 years later I think I've truly perfected them. The best flavour and crispness to date π―π₯π
Just a little prep started for Christmas Organic nuts getting ready to spice up as gifts.
Step #1 soaking the nuts Apart from getting rid of the debris on the nuts in a nutshell (pun intended) it makes them easier to digest.
... Step #2 into the dehydrator for 24 hours
Step #3 involves an organic blend of spices and more time back in the dehydrator for another 12-14 hours.
The crunch and flavour are so worth the effort and certainly easier on the digestive system which gets a big tick in my book πβ

One of many assignments, clinic papers and practicals to do in my final year. It is so rewarding not just to get each one completed (although that feels great π―) but also to learn so much and connect the dots. . This was an extremely challenging assignment looking at pharmacokinetics and pharmacodynamics of drug and nutrient interactions. . The body is capable of so much and the food we choose to eat can make a difference. It is mind blowing and amazing.... . Grateful to be on this incredible journey and looking forward to supporting more clients in the new year. . Have a fabulous weekend π
