Our Strathdon Blue
The cheese is evocative of a milder version of Stilton, with a spicy taste but many blue veins. Since the milk is rich in butterfat and protein, it gives the cheese a rich, creamy texture and a luscious, mellow yet aromatic taste/aroma. Strathdon Blue is created using vegetarian rennet, meaning the cheese is suitable for vegetarians.
Our Applewood Smoked Cheddar
Applewood smoked cheddar is a fairly dense semi-hard cheese. Applewood is not smoked, but is instead treated with an artificial smoke flavouring. The cheese is coated with mild paprika, giving it a golden-amber appearance.The cheese itself is rather soft in some cases, making it difficult to grate. The smoked flavour of the cheese does not leave a burnt aftertaste.
Our Anster Cheese
Anster cheese takes its name from the local fishing town of Anstruther. Its a ‘Cheshire’ style recipe. Typically aged for 2 – 4 months, during which time it naturally develops a thin grey edible rind. Anster cheese has a crumbly texture, which dissolves in the mouth to give a full flavour, and a lingering ‘lemony’ tang on the finish.
